Crockpot Keto Bourbon Chicken Recipe

We used liquid allulose sweetener in this recipe but you can also use an Imitation Honey that has keto friendly sweeteners in it. We tend to have this on hand for some of our barbecue recipes. It’s fantastic!
Nature’s Hollow makes a sugar free honey that is sweetened with xylitol and erythritol. Totally keto friendly! When I first tried it I was shocked to see the honey like consistency as I squeezed the bottle for the first time! It’s really good and super thick and sticky. If you don’t want to use this product, you can also make your own Keto Syrup Recipe and just add the honey flavoring! Many companies make a honey flavoring and I’ve purchased the LorAnn Oils Honey Flavoring before. Great products!
Bourbon is keto friendly but you are more than welcome to substitute that ingredient for chicken broth too.
Don’t skip the Glucomannan though because this is what makes the sauce nice and thick. Xanthun gum works in the same amounts but I prefer Glucomannan in these types of recipes. Glucomannan is Konjac Root Extract and helps to thicken sauce recipes. It also helps you to feel full too! Lots of people use it for weight loss benefits but I like how it thickens sauces so I always keep it stocked in my pantry. A small amount goes a long way. Glucomannan may be hard to find at your local grocery stores. It’s an ingredient that I always order off of Amazon. I specifically purchase the NOW brand Glucomannan seen here on Amazon.
This recipe makes a large serving so I use it as my meal prep for the week when I am preparing lunches for the family. It reheats nicely and has amazing flavor!
Crockpot Keto Bourbon Chicken Recipe Ingredients
- 1/4 cup soy sauce or coconut aminos
- 1/4 cup sugar-free ketchup
- 1/4 cup Swerve brown sugar (keto-friendly brown sugar)
- 3 tablespoons apple cider vinegar
- 2 tablespoons liquid allulose (or keto honey)
- 1/4 cup water
- 1/4 cup bourbon (or chicken broth/Bone broth)
- 2 tablespoons minced garlic
- 1/4 teaspoon ginger (ground or paste)
- 2 teaspoon pink salt
- 1 teaspoon black pepper
- 1/2 teaspoon pepper flakes (add more for extra spice)
- 3 pounds chicken (I use the chicken thighs because I prefer the dark meat but you can use chicken tenders too)
- 2 teaspoon glucomannan + 2 tablespoons cold water
Optional
- White sesame seeds, to garnish
- Green onions, to garnish
Crockpot Keto Bourbon Chicken Recipe Instructions
- Cook on low for 5 to 6 hours until the chicken is fully cooked.
- Remove the chicken and shredded it.
- Add water and glucomannan to a small container and whisk until it’s fully combined.
- Add the thickening agent to the liquid mixture in the slow cooker.
- Add the shredded chicken back to the slow cooker and cook it on high for about 10 more minutes.
- Allow it to cool slightly before serving it.
Other Items Needed
Serve it over cauliflower rice with a side of green beans. I used to make this recipe with apple juice but the juice is not keto-friendly. You don’t need to add juice to this recipe. If you want that extra flavor, you can add a squirt of MIO Apple Flavored water enhancer to this recipe if you have it on hand but it’s not absolutely necessary. It tastes great with or without it.
