Who is in the mood for something yummy and nutritious on the Keto diet? This No-Bake Raspberry Cheesecake Parfait Recipe is what you need to make to keep those sweet cravings at bay.
Is making this recipe hard? NO! It’s actually one of my favorite cheesecake recipes to make and it’s a parfait, which makes it even more amazing. You can make this dessert for any occasion, I like to take it to potlucks because it’s simple and nutritious.
No Bake Raspberry Cheesecake Parfait Recipe
Crust Ingredients
- 3/4 cup of almond flour
- 1 1/2 tablespoons of stevia
- 1/2 teaspoon of cinnamon
- 1/4 cup of butter, melted
Filling Ingredients
- 16 ounces cream cheese, softened
- 1/2 cup of sweetener substitute
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of lemon extract
- 2 teaspoons of raspberry extract
- 1/4 teaspoon of xanthan gum
- 1/2 pint of fresh raspberries to garnish
No Bake Raspberry Cheesecake Parfait Recipe Instructions
- In a small bowl, mix crust ingredients together and divide into 12 small servings cups/bowls. Refrigerate.
- In a large bowl, cream together cream cheese and sugar substitute. Fold in remaining ingredients and continue mixing until it has thickened.
- Add cream cheese mixture into a pastry bag and evenly add in the cream cheese mixture into the 12 serving dishes over the crust.
- Garnish with fresh raspberries, mint, and a lemon wedge. Refrigerate an hour before serving.
