Strawberry Shortcake Chaffle Recipe

I just made the most delightful Strawberry Shortcake Chaffle Recipe!  OMGosh, you have got to try it!  The presentation for this sweet keto-friendly dessert was extra special too!  We purchased these cute little individual size cake plates just for these dessert chaffles!  Did you see the cute Pumpkin Cake Chaffle Recipe we posted earlier this week!  It’s gone crazy viral and everyone is loving that recipe!

Strawberry Shortcake Chaffle Recipe Ingredients

  • 1 egg
  • 1/4 cup mozzarella cheese
  • 1 tablespoon cream cheese
  • 1/4 teaspoon baking powder
  • 2 strawberries, sliced
  • 1 teaspoon strawberry extract

 

Strawberry Shortcake Chaffle Recipe Instructions

  1. Preheat waffle maker.
  2. In a small bowl, whip the egg.
  3. Add the remaining ingredients.
  4. Spray the waffle maker with non stick cooking spray.
  5. Divide mixture in half.
  6. Cook half the mixture for about 4 minutes or until golden brown.

Strawberry Shortcake Chaffle Recipe Nutrition Label Information

(this does not include the toppings, only the chaffle)  Makes 2 chaffles.

Serves 2

Calories 88, Total C 3g, Fiber 0.2g, Net C 2.8g, Sugars 1.2g, Fat 5.7g, Protein 6.3g

 

Optional Glaze:  1 tbs cream cheese warmed in the microwave for 15 seconds, 1/4 tsp strawberry extract, and 1 tbs monkfruit confectioners blend.  

Mix and spread over the warm waffle.

 

Optional Cream Cheese Frosting:  1 tbs cream cheese (room temp), 1/4 tsp strawberry extract, 1 tbs room temp butter (room temp), and 1 tbs monkfruit confectioners blend.  Mix all ingredients together and spread on top of the waffle.

 

You can also top it with simple whipped cream and strawberries.  

Homemade whipped cream:  1 cup heavy whipping cream, 1 tsp vanilla, 1 tbs monkfruit confectioners blend.  Whip until it forms peaks.  Easy peasy!

    I made this today. Delicious. I was able to get three chaffles out of the recipe. Will definitely make this again. Thanx for this and all the other Chaffee recipes.

    Made this with a little extra sweetener in the waffle mix. It filled (and slightly overflowed) my full-size waffle maker. I made some whipped cream w/ sweetener and vanilla and cut up some strawberries to put on top. My youngest ate almost 1/2, but said it was too sweet. I finished it and have to agree it might have been a little too sweet as I made it. Probably more w/ the whipped cream, though. Combined it might have been a bit much.

    But – it was tasty. At least now I know to be a big more careful with the sizes for these and a full-size maker. Most chaffle type recipes only fill half of my maker so I was surprised that this filled the whole thing. 🙂 I’ll definitely try again at some point, but less sweetener overall.

    It was good but took way longer to cook. Think it might be because the strawberries made too much juice. Next time I will top with strawberries instead.
