These Bell Pepper Egg Boats Recipe are FANTASTIC! Delicious and easy to make, you can enjoy this amazing keto breakfast any day!

If you are tired of boring eggs for breakfast, this recipe will definitely change up the spice a bit!  I just love how the bell pepper slices act as if they are a bowl that hold the egg in place when it’s baking in the oven!  You can do this on the griddle grill too!  You can slice the bell pepper thinner and make rings instead of bowls too.  This will cook the egg faster so just be sure to cook the bell pepper a bit more before adding the egg if you do it this way.

Feel free to use yellow, red, orange, or even green bell peppers!

Bell Pepper Egg Boats Recipe Ingredients

  • 2 red bell peppers
  • 4 eggs
  • 1/2 cup shredded cheese like mozzarella
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper

Bell Pepper Egg Boats Recipe Instructions

  1. Preheat oven to 425 degrees.
  2. Chop red bell peppers in half and place them side up in a baking tray with lined parchment paper. Sprinkle some salt and a drizzle of olive oil.
  3. Bake pepper until soft (about 10-15 minutes).
  4. When ready remove from oven and set shredded cheese in the base of the pepper and break one egg in each. Sprinkle some salt and ground pepper.
  5. Bake them until eggs are cook (about 15-20 minutes).
  6. Enjoy while warm.
