Mixed Berry Parfait Recipe
Light, fluffy, and airy, this Mixed Berry Parfait Recipe is perfect on a warm spring and summer day! We used Silk brand unsweetened coconut yogurt in this recipe but you can use any unsweetened yogurt you want. Just make sure it doesn’t have any added sweeteners. Two Good is another brand we really like and purchase often too! I love to make a yogurt parfait with any type of berry too. We love strawberries, raspberries, blueberries, and blackberries!
We also use Lakanto sugar free maple syrup in this recipe or you can make your own Keto Syrup Recipe too! It’s way easier than you think. If you don’t want to use syrup, you can also use Jordan’s Skinny Syrups found on Amazon or at your local Tuesday Morning, Ross store, or even TJ Maxx. Butter Toffee is my favorite skinny syrup flavor and would go perfect in this recipe!
You can make these ahead of time and use them as a keto breakfast or a keto dessert! If you use mini mason jars you can add the lids to them and place them in the refrigerator for easy storage so they will be ready when you want to devour them! Either that or you could place plastic wrap over the cups too. These will last about 5 days in the refrigerator. I prep ahead of time and make a few batches for the week.
We used walnuts in the recipe but you are welcome to use any nut you choose! If you are allergic to nuts, try sunflower seeds!
Mixed Berry Parfait Recipe Ingredients
Base
- 1 cup walnuts
- 1 tablespoon coconut oil
- 1 tablespoon sugar-free maple syrup
Mixed Berries Layer
- 1 cup mixed berries + a few more to garnish
- 1 tablespoon sugar-free maple syrup
Yogurt Layer
- 1 1/2 cup of unsweetened coconut yogurt
- 1 teaspoon vanilla extract
Mixed Berry Parfait Recipe Instructions
For the base:
- Place walnuts in a blender and pulse the nuts so they break apart and look like breadcrumbs.
- Add coconut oil and maple syrup and pulse again.
- Set aside.
For the berries layer:
- Place them in a blender with maple syrup and pulse to a jam consistency.
- Set aside.
For the yogurt layer:
- Mix the vanilla extract with coconut oil. (use this recipe unless you are using a keto-approved vanilla-scented yogurt.)
To assemble:
- Prepare the dessert cups by adding 2 tbsp of the nuts base each, pressing with a spoon to cover all the surface.
- Add one layer of yogurt (about 2 tbsps) and then one of the mixed berries (about 1 1/2 tablespoons) and repeat.
- Finally, top them with a tsp of berries jam, and more fresh berries.
- Enjoy!
