Sugar-Free Cupcake Ingredients

  • 4 large eggs
  • 1/2 cup melted butter
  • 1/4 cup heavy cream
  • 2 tablespoon MCT oil
  • 1 cup Pyure Organic All-Purpose Blend
  • 1 teaspoon vanilla
  • 1 teaspoon super red Americolor food coloring
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon pink salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon Guar gum
  • 1/2 teaspoon baking soda
  • 2 tbsp Dutch-processed cocoa powder

Sugar-Free Frosting Ingredients

  • 6 ounces cream cheese
  • 1/4 cup Pyure Organic All-Purpose Blend
  • 1 teaspoon Clear vanilla
  • 3/8 cup heavy cream

Ingredients
  

  • 4 large eggs
  • 1/2 cup melted butter
  • 1/4 cup heavy cream
  • 2 tablespoon MCT oil
  • 1 cup Pyure Organic All-Purpose Blend
  • 1 teaspoon vanilla
  • 1 teaspoon super red Americolor food coloring
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon pink salt
  • 1 tablespoon baking powder
  • 1/2 teaspoon Guar gum
  • 1/2 teaspoon baking soda
  • 2 tbsp Dutch-processed cocoa powder

Sugar-Free Frosting Ingredients

  • 6 oz blocks of cream cheese
  • 1/4 cup Pyure Organic All-Purpose Blend
  • 1 tsp. Clear vanilla
  • 3/8 cup heavy cream

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix all liquid ingredients with the Pyure Sweetener. (Eggs, melted butter, heavy cream, MCT oil, Clear Vanilla, and Red Food Coloring)
  • Then add the rest of the dry ingredients to the wet mixture above (Almond flour, Coconut Flour, pink salt, baking powder, Guar gum, baking soda, and the Dutch-Processed cocoa powder)
  • Line the cupcake baking pan with cupcake liners.
  • Scoop cupcake mixture into the liners until they are about 3/4 filled.
  • Bake 350 degrees for 15 minutes on the middle rack.
  • Poke a cupcake with a toothpick and if the toothpick comes out clean, the cupcake is done. If not, bake it for another 5 minutes until it’s ready.
  • Allow the cake to completely cool before you frost it.
  • Then make the frosting by adding all the ingredients in a mixing bowl, then using a mixer to blend it until smooth.

TIP: make sure the cream cheese is room temperature so it blends easier.
