Carbquik is technically not for strict keto dieters.  It has a higher carb count because of the fiber and flour used in the ingredients but if you are following a low carb lifestyle, this is perfect for you.

Lemon Blueberry Muffins Recipe Ingredients

Lemon Blueberry Muffins Recipe Instructions

  1. Preheat oven to 350 degrees.
  2. Add all the ingredients except for the blueberries into a medium mixing bowl.
  3. Mix together until well combined.
  4. Fold blueberries with a baking spatula into the mixture until it fully mixed together.
  5. Add the muffin liners to the mini muffin baking pan.
  6. Spoon an equal amount of the mixture into the liners.
  7. Bake in preheated oven for 20-25 minutes.
  8. Serve warm.
