This is a true celebration from this Southern girl to y’all! I was raised in the North GA mountains and have fond memories of picking up paper bags full of pecans from my grandparent’s back yard. Cracking and shelling them wasn’t too much fun, but I knew the reward would be a yummy, gooey, freshly baked pecan pie. I’ve taken all that flavor and packed it into a Low Carb Chaffle Cake.

First, I would like to mention that this recipe is low carb because of the backstrap molasses ingredient. It helps with the color and the flavor. You can get a lighter, more keto-friendly recipe by adding a keto-friendly syrup in as a replacement for this ingredient. I would use maple syrup from Lakanto or Jordan’s skinny syrup that has a similar flavor.

  • Pecan Pie Filling Ingredients
  • 2 tablespoons butter, softened
  • 1 tablespoon Sukrin Gold
  • 1/8 teaspoon blackstrap molasses, optional but helps with color and flavor
  • 2 tablespoons Maple Bourbon Pecan Skinny Syrup
  • 2 tablespoons heavy whipping cream
  • 2 large egg yolks
  • Pinch salt
  • 2 tablespoons pecans, lightly toasted (I did it in the Airfryer)

Pecan Pie Chaffle Ingredients

Pecan Pie Chaffle Cake Filling Instructions

  1. Add butter, sweetener, heavy whipping cream and syrups to a small saucepan on low heat.
  2. Whisk until well combined.
  3. Remove from heat.
  4. Pour 1/2 of the mixture into egg yolks and whisk well.
  5. Add that mixture back into the saucepan while stirring continuously.
  6. Add a pinch of salt and pecan.
  7. Let simmer until it starts to thicken.
  8. Remove from heat and let cool while making the Chaffles.

Pecan Pie Chaffle Cake Recipe Instructions

  1. Mix all ingredients except pecans in a small blender for about 15 seconds.
  2. Stop and scrape down the sides with a spatula, and continue mixing for another 15 seconds until well blended.
  3. Mix in pecans with a spatula.
  4. Pour 3 T of batter in preheated mini waffle maker.
  5. Cook for 1 1/2 mins.
  6. Remove to cooling rack.
  7. Repeat.

Will make 3 full Chaffles with a tiny one for tasting!

Put 1/3 of the pecan pie filling on each Chaffle and assemble as desired!

This is very rich! This is one you will want to share!

The filling is 3.3 net carbs for the entire recipe. Chaffles are 4.2 net carbs for entire recipe. Total net carb for entire cake is 7.5. For 1/2 cake 3.75 net carbs.

PECAN PIE FILLING INGREDIENTS
