Keto Pumpkin Cookies Recipe Instructions

  1. In a medium bowl, combine the butter and swerve. Mix with a hand mixer until smooth and well combined.
  2. Add in the egg, pumpkin puree, and vanilla extract. Mix until fully combined.
  3. Add the remaining dry ingredients and hand mix until it forms a dough.
  4. Use a spoon or a cookie scoop to form the dough balls. Use your fingers or a spoon to press down the cookies slightly to form a cookie shape.
  5. Bake at 350 degrees for about 18 to 20 minutes or until golden brown.

Optional Cream Cheese Glaze Instructions

  1. Add the ingredients to a small bowl and mix until smooth and creamy. If needed, add more heavy whipping cream to get the consistency you want to drizzle the cookies.
