Jalapeno Popper Stuffed Meatloaf Recipe
I am in love with this Jalapeno Popper Stuffed Meatloaf Recipe! Do you remember the Keto Chicken Jalapeno Popper Casserole recipe we made last week? Well, the family liked it so much that I had to figure out a way to make a meatloaf version with the same flavors. It’s not too spicy and it has the right amount of flavor that everyone will love!
I took this Keto Meatloaf recipe and added the jalapeno popper stuffed variation to it!
Just look at how it turned out!! The whole family LOVED IT!
Jalapeno Popper Stuffed Meatloaf Recipe Ingredients
- 1.5 pounds ground beef, or ground pork (or half of each for extra flavor)
- 1/4 cup chopped onion
- 1/2 teaspoon fresh minced garlic
- 1/2 cup crushed pork rinds, ground flaxseed, or almond flour
- 2 eggs
- 1 tablespoon Italian Seasoning
- 1/2 teaspoon ground black pepper
- 1 tablespon mustard powder
- 1 teaspoon liquid aminos (or soy sauce if you prefer)
- 8 ounces cream cheese, softened
- 1/2 cup cooked bacon
- 2 jalapeno peppers, diced
- 5 tablespoons AlternaSweets Keto Ketchup
Jalapeno Popper Stuffed Meatloaf Recipe Instructions
- Add the ground beef, chopped onion, garlic, pork rinds, eggs, Italian seasonings, pepper, mustard powder and liquid aminos in a large bowl and mix it until it’s fully combined. Most of the time I use my (clean) hands instead of a spoon to mix it all together just like Grandma used to do too.
- Spray non stick cooking spray into the bread pan and pour half the meat mixture into the pan.
- Spread the softened cream cheese on top of the bottom meatloaf layer.
- Add the jalapenos and bacon bits.
- Top the meatloaf with the second half of the meat mixture.
- Add extra AlternaSweets Ketchup to the top of the meatloaf, then cover it with foil before you bake it.
- Bake at 400 degrees for about an hour.
- TIP: You can add it to one large bread pan or two small bread pans. If you use two small bread pans this meatloaf will cook faster! I’ve done this when my family hungry and wants dinner faster.
- You can do lots of different stuffed meatloaf variations too!
- We’ve added cheese, spinach, olives, jalapenos, cream cheese, and even soft boil eggs in the middle of this meatloaf just to change things up every once in a while.
- You can also wrap the outside of the meatloaf in bacon too. The possibilities are endless! This recipe is hard to mess up so feel free to get creative each time you make it so you can figure out what your family loves best.
- Another thing to note, we used unflavored pork rinds but I find adding the flavored pork rinds really does add flavor you will like! You can hand crush them or you can use a food processor to pulse them for a few seconds to turn them into crumbs too.
- The salt and vinegar or the bbq flavored pork rinds taste amazing in this keto meatloaf recipe!

We really enjoyed this recipe. We used 80/20 ground beef because I didn’t want the meatloaf to be dry and there was not a specification in the recipe. Next time I will use 93% lean and a few extra cloves of garlic. Thank you for the great recipe!
Do you leave the seeds in the jalapeños????
I like to deseed the jalapenos because it will reduce the heat from them. If you like spicy food, you can leave them.
I made this and it tastes great…however my loaf ended up with a ton of liquid. I used grass fed beef and all natural pork and followed the recipe exactly. Any ideas? It still tastes good just curious why so much liquid.
