Keto Lemon Chaffle Recipe

We made the most delightful Keto Lemon Chaffle Recipe today!  It had the right amount of lemon and the right amount of sweetness!  Even my non keto friend who tried it didn’t think it was keto!  How cool is that?

This is made with a cream cheese base which makes this chaffle recipe a tad lighter and fluffier than a normal chaffle recipe that is made with regular shredded cheese.  If you are looking for a lighter keto dessert, this one is for you!  I love lemon with blueberries or blackberries.  If you love that flavor combination too, be sure to top this lemon chaffle recipe off with a few fresh berries.  It tastes fantastic and looks so pretty!

There are two special ingredients you need to make this lemon chaffle recipe perfect.  It’s cake batter extract and lemon extract!  I’m pretty sure you can get the lemon extract just about anywhere but the cake batter extract might be a bit harder to find.  I had to order mine off of Amazon.  Thank you, Prime 2 day shipping!

DIY Chaffle Cake Stand

Now the next thing you might notice in our photo for the lemon chaffle is the cake stand.  We made out very own DIY Chaffle Mini Cake Stand using the cutest little tea cups!  All you have to do to make your own is turn the cup upside down and glue the cup rim to the bottom of the saucer plate!  I will tell you right now that the best glue for a ceramic mug like this is E6000 found here on Amazon.  I absolutely love how it turned out.  If you don’t glue it, just be careful to remove the plate from the cup before you start to cut the cake.  I would hate for it to fall over and break.

I bet you can get these saucers just about anywhere.  We found ours at the HomeGoods store here in Austin, Texas.

I even found a few cute teacups on Amazon!  But, if you are looking for a bargain, you might just score a deal at a local garage sale too.  Keep your eyes peeled!  I see stuff like this at garage sales all the time.  It’s a perfect buy when you only need one teacup and one saucer.

Keto Lemon Chaffle Recipe Ingredients

 

Chaffle Cake:

  • 2 oz cream cheese, room temp and softened
  • 2 eggs
  • 2 tsp butter, melted
  • 2 tbs coconut flour
  • 1 tsp monkfruit, powdered confectioners blend (add more if you like it sweeter)
  • 1 tsp baking powder
  • 1/2 tsp lemon extract
  • 20 drops cake batter extract

 

Chaffle Frosting:

  • 1/2 cup heavy whipping cream
  • 1 tbs monkfruit, powdered confectioners blend
  • 1/4 tsp lemon extract

 

Keto Lemon Chaffle Recipe Instructions

(this recipe makes about 4 chaffles)

  1. Preheat the mini waffle maker
  2. Add all of the ingredients for the chaffle cake in a blender and mix it until the batter is nice and smooth.   This should only take a couple of minutes.
  3. Use an ice cream scoop and fill the waffle iron with one full scoop of batter.  This size of the ice cream scoop is about 3 tablespoons and fits perfectly in the mini waffle maker.
  4. While the chaffles are cooking, start making the frosting.
  5. In a medium-size bowl, add the chaffle frosting ingredients.
  6. Mix the ingredients until the frosting is thick with peaks.
  7. All the chaffles to completely cool before frosting the cake.
  8. Optional:  Add lemon peel for extra flavor!

    Would this work without the cake batter extract? That’s something I don’t usually keep in stock. Sounds like it’s a flavoring of some sort so wondering what it adds to the equation.

      You can make it without it. I would add a bit extra lemon extract. The cake batter adds a really nice cake flavor though. It’s worth the purchase!

      Worked fine for me without the cake batter extract. Used some vanilla instead (and a little extra lemon/sweetener). Just used “plain” whipped cream for the topping.

      So – made this with a normal waffle maker. It turned out okay, but makes _2_ normal sized waffles. That’s important to know. I used my bullet to blend the ingredients and the blade popped off once I loosened it a little. Surprising, but no harm done. I think the heat + the baking powder caused that.

      In either case, it was tasty. I can’t say how much more or less tasty it would have been with the cake batter extract. I might try a _little_ almond extract as well next time to see what that does, but otherwise it was pretty good for a “dessert” type waffle. I personally like a little more lemon flavor, but that’s me. 🙂
