2 Ingredient Keto Pasta Recipe

WHOA! Hold on to you hats because we just made the best 2 ingredient keto pasta recipe! Only 2 ingredients!  And neither one of those ingredients includes eggs!

It does take a little bit of prep to make these noodles but they are absolutely worth every bit of the effort.

I mean, who doesn’t miss pasta when doing the keto diet?! I do! I know you do too.

Here’s the best part, these noodles can be rolled really, really thin and they won’t break. Super thin noodles! This means the noodle to sauce ratio will taste fantastic in any pasta recipe you want to turn this into

We made Keto buttered noodles! Anyone remember devouring noodles with butter and salt before doing keto? Talk about a major carb fest! This recipe allows me to enjoy the same dish but without the carb guilt!

We’ve made these noodles so many times.

Can You Buy Pre-Made Low Carb or Keto Noodles?

Yes, you can.  Costco carries a brand of low carb noodles in the refrigerated section near the specialty cheese area.  The brand is called Healthy Noodles.

We made a delightful Low Carb Alfredo Chicken Pasta the other night.  The whole family loved it.

We also made the Low Carb Feta Pasta that went viral on Tiktok with these noodles too!  That recipe was also a bit hit!

These are mainly fiber so they are zero net carb and they taste fantastic!  They do contain soy, so if you are sensitive, that is good to know.

I do purchase these noodles and keep them on hand on weeks I am limited on time and don’t want to make homemade keto pasta.

How Do these 2 Ingredient Keto Pasta Noodles Taste?

These keto pasta noodles have the right texture you are looking for!  They are not rubbery like the noodles made out of mushrooms that are keto friendly.

Also, these noodles are creamy and light in texture!  They compliment all the pasta sauce choices nicely!  They are very filling too.

 

How to Season the 2 Ingredient Pasta Noodles?

You absolutely don’t have to add seasonings to this noodle recipe.  If you like butter noodles, you don’t want to add seasonings because the mozzarella is very light in taste and you will love the buttered noodles.

If you do want to add seasonings, I really enjoy Rosemary or Italian Seasonings for a savory noodle.

To be honest, I make most of them without seasonings because I add most of the seasonings or flavors I want to my sauce recipe.

Keto Pasta Meal Ideas

You can have add grilled chicken on top with parmesan cheese.

You can make keto pesto pasta!

You can make a keto shrimp scampi pasta!

You can use them for keto Alfredo pasta!

Or you can even use them for a keto spaghetti pasta too. Just cut the noodles thinner. Easy!

The two ingredients I used was Low-moisture Mozzarella cheese and a packet of gelatin.

My favorite way to consume these keto pasta noodles is with grilled chicken,  cherry tomatoes, and basil pesto or warm melted butter with a small sprinkle of parmesan cheese on top!  My whole family enjoys this dish.  Absolutely delightful.

Knox Gelatin – How much is in a packet of Knox Gelatin?

Gelatin is the main ingredient that holds the cheese together and allows you to cut super thin noodles without them crumbling or bulking up.

The gelatin in this recipe also creates the real noodle texture you are used to.  It’s the magically ingredient!

Can you substitute the gelatin in this recipe with something else?  Yes,  you can use an egg yolk but I promise you that gelatin is way better.

You can buy Knox gelatin in a box that contains 4 packets.  Or you can buy a big jar of it.  I don’t use this all the time so I buy the box.

1 pouch is about 2 1/2 teaspoons (7g) of unflavored Knox gelatin.
If a recipe calls for 1 tablespoon, use 1 pouch of unflavored Knox gelatin.

Kitchen Tools Needed to Make the 2 Ingredient Keto Pasta Noodles

To make these 2 ingredient keto pasta recipe you will need a medium sauce pan, parchment paper, a spatula, a pizza cutter or knife, and the 2 ingredients you need to make the pasta noodles.

Feel free to double or triple the recipe as needed.

This meal shows the keto pasta noodles topped with cherry tomatoes, grilled chicken, basil pesto and a light sprinkle of parmesan cheese on top.  This is my favorite way to eat this keto pasta!

This is an excellent way to use up extra grilled chicken if you have some as leftovers.  I love turning left over meats from a previous meal into a whole new meal because it doesn’t feel like leftovers when you make meals like this.

2 Ingredient Keto Pasta Recipe Ingredients

Makes 2 servings

1 1/2 cups low moisture Mozzarella cheese, shredded
1 tbs (or 1 packet) of Knox unflavored gelatin
1/3 cup water
Optional seasonings: 1 tsp Italian seasoning or Rosemary seasoning.

 

You start by mixing the gelatin in boiling water.

Then you add the shredded cheese and seasonings, if using.

Then you lay the melted cheese out on parchment paper and wait for it to fully set and cool.  Then you use a pizza cutter to cut the noodles like this:

Be sure to save the tops of the parmesan cheese containers because you can reuse them. They fit perfectly on a mason jar!  LOOK!

2 Ingredient Keto Pasta Recipe Instructions

Things to know about these 2 ingredient keto pasta noodles.

1. It’s best to serve these noodles at room temperature or cold.
2. If you want warm noodles, simply warm the ingredients or sauce you plan to serve on top of these keto pasta noodles.
3. You can heat the plate of noodles for about 30 seconds and they will still keep their shape. They will heat fast in the microwave. They will tend to stick together some so I don’t normally want to do this. The sauce you add on top of the noodles, if warm or hot, will heat the noodles to the perfect temperature!
4. You can make these noodles ahead of time. After I cut the noodles, keep them on the parchment paper and simple roll them up to store them in the refrigerator until you are ready to use them. Just make sure you set them out to get to room temperature when you are ready to use them.
5. These noodles will last about 5 days in the refrigerator. I have not tested to see if you can freeze these noodles.

Ingredients
  

  • 1 1/2 cups low moisture Mozzarella cheese shredded
  • 1 tbs or 1 packet of Knox gelatin unflavored
  • 1/3 cup water
  • Optional seasonings: 1 tsp Italian seasoning or Rosemary seasoning.

Instructions
 

  • Lay out a sheet of parchment paper in a baking sheet.
  • Pre measure 1 1/2 cups of shredded mozzarella cheese and set aside.
  • Add the seasonings, if using, to the mozzarella cheese.
  • Add 1/3 cup water to a sauce pan over medium heat.
  • Allow the water to get to a boil before adding the gelatin.
  • Sprinkle in 1 tbs or 1 packet of Knox unflavored gelatin.
  • Mix the gelatin into the boiling water and stir to dissolve any clumps.
  • Continue cooking the gelatin until it gets thick and bubbly.
  • You should be able to scrap a spatula along the bottom of the pan and see separation in the liquid. If it's too watery, it will just coat the bottom of the pan without separating.
  • This will take about 3 minutes or so to thicken to the right consistency.
  • Add the shredded cheese to the hot gelatin mixture.
  • Stir the cheese until it has fully melted and the gel has fully incorporated into the cheese sauce.
  • Remove the sauce pan from the heat and pour the mixture onto the parchment paper.
  • Use a spatula to spread out the cheese mixture as thin as you can on the parchment paper.
  • Allow the pasta to fully cool and thicken. Don't worry if some of the spots are super thin and almost see through. You can make the noodles as thin as you want because they will still stick together!
  • Once the pasta sheet has completely cooled and thickened, you can use the pizza cutter to start cutting long strips of pasta noodles.
  • Cut them as wide or as thin as you want. I cut my pasta noodles about 1/3 to 1/2 inch wide.
  • Remove the cut noodles from the parchment paper and add them to a serving plate.
  • Top the noodles with any ingredients you want to complete your meal.
