Bacon Wrapped Meatloaf Muffins Recipe Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2 teaspoon black pepper
  • 1 cup cheddar
  • 1/4 cup mozzarella
  • 1/2 cup almond flour
  • 2 eggs
  • 1 tablespoon soy sauce
  • 12 slices bacon, sliced in half

 

Bacon Wrapped Meatloaf Muffins Recipe Instructions

  1. Preheat oven to 375°F.
  2. Add all ingredients to a large bowl, minus the bacon. Mix well.
  3. Take the slices of bacon and create an “x” or “t”.
  4. Using a cookie scoop, place a scoop of the meatloaf mixture into each muffin tin.
  5. Tighten up the bacon slices by folding in the smaller side first (if you have one) and the larger side last.
  6. Flip the meatloaf muffin over so that you see the “smooth side” of the bacon. This will also hold the bacon in place during the cooking process in the oven.
  7. Bake for 35-45 minutes.
  8. Broil on low for 5 minutes or until bacon is crispy on the outside.
  9. Enjoy!

Mix together all of the meatloaf ingredients except the bacon.

Add two slices of bacon to the muffin tin. Make a “T” with the bacon strips.

Add a scoop of meatloaf and then wrap the bacon around the meatloaf.

Bake the meatloaf. Broil at the end to get golden brown crispy bacon.

Meatloaf is an easy dinner idea when it comes to thinking about side dishes. You can make it with:

  • Roasted vegetables
  • Cauliflower mash or rice
  • Loaded Cauliflower Bake

Variations to Bacon Wrapped Meatloaf Muffins

The basis of any good recipe is how you can change it to give it new life or to fit your own taste buds. When it comes to these muffins, try:

  • Use Ground Chicken or Turkey. You can also opt for ground pork. Each of these will change the flavor slightly.
  • Add Heat. If you like a little spice to your meatloaf, you can add red pepper flakes or hot sauce.
  • Use Chili or taco seasoning. You can add in these seasonings to give your meatloaf a new taste.

How Long Do You Bake Bacon Wrapped Meatloaf Muffins?

These muffins take about 15 minutes to make and assemble, then it will take 35-45 minutes to bake. If you like a nice crisp to the bacon, you will want to broil the muffins for 5 minutes. This will crisp up the bacon.

How to Store Leftovers

Once the muffins have cooled, you can transfer them to an airtight container or wrap them individually with plastic wrap. These muffins are great to grab from the refrigerator and heat up for a snack or an easy lunch.

    These were really good! Cleanup was not fun. I think I will try cooking them on parchment in a baking sheet next time.

      They make parchment cupcake liners. I use them for everything when baking and using muffin pans. They are available on Amazon, then there is no cleanup mess.

    I made these tonight. They were great. Very easy to make and cook. Boy the house sure smelled tasty!!!!!! LOL

    I made these last night. I missed the part about broiling them on a rack and broiled them in the muffin pan so the bottoms were not crispy. They were still really good.
