Are samoas the same as Caramel deLites?
Samoas have coconut and Caramel deLites have caramel. I’d say if you like coconut, it doesn’t really matter which one you go for. They’re both delicious in their own right!
The Problem With Regular Samoa Cookies
Regular Samoa cookie bars contain flour and sugar, not to mention a ton of calories. They aren’t something you can eat on a low carb diet. That’s why I decided to make this version instead. Keto Samoas bars are easy to make if you have the ingredients around the house already. So they’re perfect for last minute desserts that won’t break your ketogenic diet (or any other type of special diet!).
How do you store Samoa cookie bars after making them?
They’re quite resilient, so you can store them in an airtight container in the refrigerator for up to three (3) days. It’s best to heat them up in the microwave again before eating if you’ve chilled them.

Homemade Copycat Keto Samoa Cookie Bars Recipe Ingredients
Crust Ingredients:
- 1 1/4 cups almond flour
- 1/4 cup sweetener of choice, granulated (monk fruit or swerve)
- 1/4 teaspoon salt
- 4 tablespoons butter, melted
Filling Ingredients:
- 4 1/2 tablespoons butter
- 1/2 cup plus 1/4 cup brown swerve
- 1 cup heavy cream
- 1/2 teaspoon plus 1/4 teaspoon vanilla extract
- 1/2 teaspoon salt
Additional Ingredients:

Toasted Coconut Flakes Instructions:
- Add unsweetened coconut flakes to a baking sheet.
- Toast at 325 degrees for about 5-7 minutes or until toasted – watch closely.
Crust Instructions:
- In a medium mixing bowl, stir all the crust ingredients together.
- Line a square baking pan with parchment paper and add the mixed dough ingredients to it.
- Press the mixed ingredients down into the bottom of the baking pan until well packed and evenly spread in the pan.
- Bake at 325 degrees for 15-18 minutes.
- Remove from the oven and set aside to cool.
Filling Instructions:
- In a skillet, add butter and brown swerve and simmer for 3-5 minutes.
- Add heavy cream, vanilla, and salt and mix well.
- Next, add unsweetened coconut flakes and mix together in the skillet.
Preparing the cookie bars:
- With the crust cooled, melt sugar free chocolate in 30 second increments in the microwave. Stirring each time so the chocolate chips doesn’t burn. This should take between 1-2 minutes to melt to the right consistency. Note: if the chocolate is too thick, you can add a small amount of coconut oil to get the right consistency for a drizzle.
- Drizzle sugar-free chocolate on top.
- Then add the filling over the chocolate drizzle.
- Chill in the refrigerator for 1 hour, then top with the drizzle again.
- Cut into squares and enjoy!
Optional Toppings
