Keto Fluffernutter Cookies Recipe Instructions

3 Ingredient Peanut Butter Cookies Instructions

  1. Preheat the oven to 350 degrees.
  2. In a medium size bowl, add all the ingredients in a bowl and mix them all together until it’s well combined.
  3. Roll the dough into 1 inch balls using a scoop or your hands.
  4. Place the balls of dough on a cookie sheet lined with parchment paper or a silicone baking mat.
  5. Press down on each ball with a fork twice in opposite directions creating a criss-cross pattern on each cookie as seen in the photos below.
  6. You will bake these cookies for about 12 to 15 minutes or until golden brown.
  7. Allow them to cool down for about 5 minutes before removing them from the tray.

Makes 14 cookies

Tip: Those silicone baking mats are amazing! Cookies are evenly cooked and the cookie crust comes out perfect every single time! If you don’t have any, I highly recommend ordering this Silicone Baking Mat Set on Amazon. It’s money well spent!

Keto Marshmallow Fluff Instructions

  1. In a small bowl, add the water.
  2. Sprinkle the packet of unflavored gelatin over the water and let it set for about 2 minutes. Give it a little stir to help combine all the gelatin if needed.
  3. Using a stand mixer, add the prepared gelatin, vanilla extract, and liquid allulose to the bowl.
  4. Add the whisk attachment.
  5. Turn on the mixer to level 2 (slow) until the whisk begins to move.
  6. Once the mixture has begun to move, turn the mixer speed all the way up to level 10. I used the splash guard on my mixer but you may not need to if your bowl is deep enough.
  7. Set a timer for exactly 20 minutes. You will see the liquid start to get texture at the 10-minute mark but to make it extra fluffy go the full 20 minutes.
  8. Set aside when complete.

 

Assembly Instructions

  1. After the peanut butter cookies and marshmallow fluff are made. Take one of the cookies and layer a good amount of sugar-free peanut butter on it.
  2. Next, add a dollop of marshmallow fluff to the peanut butter layer.
  3. Top with a second cookie and enjoy! You can thank me later!

  • 1/2 cup keto approved sweetener of your choice Xylitol, erythritol, Pyure or monk fruit each of these sweeteners may be a different ratio compared to regular sugar. Please take that into account when you measure out a half a cup
