Keto Peanut Butter Fudge Recipe (only 2 ingredients needed!)

We just made the best Keto Peanut Butter Fudge Recipe with only 2 ingredients!  This recipe was not planned.  It just happened and in the weirdest way!

We were visiting our lake place where we have minimal ingredients.  We stock pile very few ingredients at this place because we don’t cook or bake much when we are at the lake.  We mainly grill outdoors.  We have an RV and I have never used the stove inside this brand new RV.  I refuse to cook or bake when on vacation.  My husband loves to grill so we make everything on the grill.  Even breakfast!

We enjoyed a good day out on the water skiing and boating.  We came back to the RV ready to eat!  Dinner was being prepped and the kids were looking in the pantry for anything they could eat immediately.

I was in a totally carefree mood as I had consumed one too many Crook & Marker drinks.  Gosh, I love those drinks!

As the kids busted out the peanut butter they were asking about dessert.  I didn’t plan on having a dessert at the lake but I saw a bottle of fiber syrup (sugar free keto friendly syrup) in the pantry and pulled that out.  I started mixing a small amount of syrup with the peanut butter.  What an intoxicated move, am I right?!!  LOL!  I don’t drink very often at all.  So two Crook & Marker drinks put me in a spin!  That’s totally my limit.

It’s funny how some of the best recipes can be made up by accident!  Have you done that before?  Made a recipe and just fell in love with it?  Or you make a recipe just throwing ingredients together without measuring and then it comes out so good that you wished you have measured everything?  Yes, this happens to me often!

Low and behold, it started to make the beginning of a fudge consistency with a sweetness that was absolutely perfect!  Why hadn’t I thought of this before?  We always keep some sugar free fiber syrup in the RV because we like to make pancakes on the grill outside too.  We have a cast iron flat top grill too.

Since the lake incident with the accidental fudge recipe, we did a bit more testing when we got home and found the perfect consistency for peanut butter fudge that’s sugar free!  It’s a 2 to 1 ratio between peanut butter and fiber syrup.  This means 2 parts peanut butter to one part of fiber syrup that’s keto friendly!

You can make it by the spoonfuls for individual servings for a quick treat or you can make a whole sheet pan full of peanut butter fudge.  The next time I made it I made a full sheet pan full!  The kids love it and ask for it often.

Keto Peanut Butter Fudge Recipe Ingredients

This recipe makes 66 one inch squares of fudge!

These are all the sugar free and keto friendly syrups I’ve used:

Keto Peanut Butter Fudge Recipe Instructions

  1. Add the peanut butter and sugar free fiber syrup in a small bowl and mix until fully combined.  It will start to thicken once all the ingredients are fully corporated.
  2. Lay out a sheet of parchment paper on a sheet pan.
  3. Spread the fudge evenly on the sheet pan.
  4. Cut into one inch squares.

These will last in the refrigerator for up to 2 weeks!

What type of fiber syrup should I use in this recipe?

I tend to buy the VitaFiber syrup on Amazon only because it seems to be the best value.  If you read the label, they are all basically the same ingredients.  I’ve tried this with ChocZero syrups and Sukrin syrups too.  All work perfectly!

ChocZero comes in really small containers and they are not that cheap.  I found a really big container of fiber syrup called Fiber Yum but I didn’t have a need to buy such a big container of it.  The VitaFiber lasts me a very long time since I limit the use of it.

The only syrup I probably wouldn’t try on this would be the Lakanto syrups.  I find these to be a bit watery.  You will need the thick syrup to get the fudge consistency needed for this keto peanut butter fudge recipe.
