Keto Pumpkin Cookies Recipe Ingredients
- 1/4 cup butter, room temp
- 1/3 cup swerve, golden
- 1 egg
- 1/2 cup pumpkin puree, unsweetened
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1 teaspoon cinnamon powder
- 1/4 teaspoon pumpkin pie spice
- 1/4 teaspoon salt
- 1/4 teaspoon xanthan gum
- 1/2 teaspoon baking powder
Optional Cream Cheese Glaze
- 4 oz cream cheese, room temp
- 1/2 cup monkfruit confectioners blend
- 1 tsp vanilla extract
- 2 to 3 tablespoons of heavy whipping cream (or more if needed)
Keto Pumpkin Cookies Recipe Instructions
- In a medium bowl, combine the butter and swerve. Mix with a hand mixer until smooth and well combined.
- Add in the egg, pumpkin puree, and vanilla extract. Mix until fully combined.
- Add the remaining dry ingredients and hand mix until it forms a dough.
- Use a spoon or a cookie scoop to form the dough balls. Use your fingers or a spoon to press down the cookies slightly to form a cookie shape.
- Bake at 350 degrees for about 18 to 20 minutes or until golden brown.
Optional Cream Cheese Glaze Instructions
- Add the ingredients to a small bowl and mix until smooth and creamy. If needed, add more heavy whipping cream to get the consistency you want to drizzle the cookies.
