A FUN TWIST ON A CLASSIC FALL FAVORITE!!! ??? (Low Carb/Keto)
Apple Pie Churro Chaffle Tacos Recipe
Chayote Apple Pie Filling
- 1 Chayote Squash, cooked, peeled and sliced
- 1 T Kerrygold butter, melted
- 2 packets True Lemon
- 1/8 tsp cream of tartar
- 1/4 cup Swerve Brown
- 2 tsp Ceylon cinnamon powder (more if you like)
- 1/8 tsp ginger powder
- 1/8 tsp nutmeg
How to make Apple Pie Taco Filling
- Boil the whole chayote for 25 minutes. Let it cool. Peel and slice into 1/4 inch slices.
- Mix all ingredients together and stir in chayote to coat well.
- Place in a small baking dish and cover with foil. Bake for 20 minutes.
- Place 1/4 of the mixture in a food processor or small blender and process until it reaches applesauce consistency.
- Add to chayote slices and stir.
Cinnamon Chaffle
- 2 eggs, room temperature
- 1/4 cup mozzarella, shredded
- 1 tsp Ceylon cinnamon
- 1 T Swerve Confectioners
- 2 tsp coconut flour
- 1/8 tsp baking powder
- 1 tsp vanilla extract
Apple Pie Churro Chaffle Tacos Instructions
- Whip eggs.
- Add sweetener, cinnamon, and vanilla.
- Mix well.
- Add remaining ingredients and stir.
- Put 3 T batter in preheated Dash Mini Griddle.
- Cook for 5 minutes.
- Sprinkle hot chaffle with cinnamon and granular sweetener mixture.
To Assemble the Apple Pie Taco
- Place chaffles in taco holders or fold gently to shape.
- Add 1/4 of Apple filling to each taco chaffle.
- Top with whipped cream or vanilla bean ice cream.

Why is it called a chaffle?
It’s called a chaffle because cheese + waffles = Chaffles! It’s just a clever name that someone in the keto community invented. Pretty cute, huh?!!
What kitchen gadget do you use to make chaffles?
I love my little Mini Waffle Maker and I use it all the time. You can use a full-size waffle maker, just be sure you double the recipe in most cases.
Can you freeze chaffles?
Yes, they freeze well! Just be sure to wrap them tightly in an airtight container to keep them fresh longer. You can freeze them for up to a month. I haven’t tested any longer than that.
Can you make chaffles for a whole week at one time?
You can also prep ahead of time and make fresh chaffles for the week. They will stay fresh as long as you keep them refrigerated. To reheat them, simply pop them in the microwave or air fryer to heat them up. The air fryer tends to get them nice and crispy if that’s what you are going for!
