I think you’ll agree with me that an easy baked salmon and veggies dish is one of the best meals to have on a busy day. It tastes delicious, cooks up in no time at all, and requires minimal cleanup!

You can also substitute any other type of protein for the salmon – try cooking some chicken breasts instead!

Do you bake salmon covered or uncovered?

Personally, I prefer to bake my salmon and veggies covered because it keeps in the steam that cooks the salmon and vegetables perfectly.

What do I serve with salmon?

To make the salmon and veggies recipe even better, I recommend serving it with a side salad. This will make your meal complete and help you get some more vegetables in on the side.

What should I use to bake my salmon in?

In this recipe, we used a glass 9×13 baking dish. This made clean-up a breeze and everyone in my family loved this dish!

 

Baked Salmon and Veggies Recipe

 

Easy Baked Salmon and Veggies Ingredients

  • 4 – 6 oz pieces of salmon
  • fresh cherry tomatoes
  • zucchini, sliced and rolled
  • red onion, sliced
  • red bell pepper, sliced
  • limes, quartered
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic
  • 1-2 teaspoon Italian seasoning
  • 1 tablespoon minced garlic
  • 1 fresh lime, squeezed

 


 

Easy Baked Salmon and Veggies Instructions

  1. Preheat oven to 400 degrees.
  2. Place salmon and veggies in a 9×13 baking dish.
  3. Top with olive oil and seasoning. Mix carefully to make sure salmon and veggies are coated.
  4. Bake at 400 degrees for 15-18 minutes until salmon is opaque and flaky when pulled apart with a fork. You can broil the last 1-2 minutes if desired.
  5. Serve and enjoy!
