OREO Cookie Chaffle Recipe

The key to this recipe is black cocoa powder. Black cocoa is the type of cocoa that is used in OREO cookie type recipes. It has a very distinct taste that is very different for any other type of cocoa. It’s almost like the regular dutch processed cocoa we use in our Sugar Free Red Velvet Cake recipe but black cocoa is heavily processed and gives that extra dark black color.
I really need to take a photo of the three different colors of each cocoa powder so you can see just how different they really are. In black cocoa, all the acidity has been neutralized, rendering the cocoa powder completely mellow, non-bitter, and very black in color. Black cocoa also contains no acid, it won’t react with baking soda. The darker the color of cocoa, the more complex flavor it has whereas, natural cocoa powder tends to be fruitier tasting.
As an example, this OREO Cookie Chaffle recipe will taste different from our Keto Chocolate Waffle Cake recipe but both are similar ingredients.
Here’s another hack for this recipe. Anytime you use any chocolate in a recipe, you can always add a small amount of coffee to intensify the chocolate flavor. If you are a chocolate lover like I am, I highly suggest you try this trick. I’ve been doing this in my recipes for as long as I can remember. I wanna say it’s a hack that grandma taught me!
It’s an optional ingredient though… so if you don’t have instant coffee on hand, you can still make this recipe. Don’t let that ingredient hold you back.

OREO Cookie Chaffle Recipe Ingredients
Chaffle ingredients:
- 1 egg
- 1 tablespoon black cocoa powder
- 1 tablespoon monkfruit confectioners blend (or your favorite keto-approved sweetener)
- 1/4 teaspoon baking powder
- 2 tablespoons cream cheese, room temperature and softened
- 1 tablespoon mayonnaise
- 1/4 teaspoon instant coffee powder (not liquid)
- pinch salt
- 1 teaspoon vanilla
Frosting ingredients:
- 2 tablespoons monkfruit confectioners
- 2 tablespoons cream cheese softened and room temp
- 1/4 teaspoon vanilla
OREO Cookie Chaffle Recipe Instructions
This recipe makes 3 OREO chaffles.
- In a small bowl, whip up the egg.
- Add the remaining ingredients and mix well until the batter is smooth and creamy.
- Divide the batter into 3 and pour each in a mini waffle maker and cook it for 2 1/2 to 3 minutes until it’s fully cooked.
- In a separate small bowl, add the sweetener, cream cheese, and vanilla. Mix the frosting until everything is well incorporated.
- Spread the frosting on the waffle cake after it has completely cooled down to room temperature.

You don’t taste the mayo so don’t change a thing about this recipe, go to a convenience store and pick up a free packet of mayo if you don’t keep it on hand. Mayo is in many chocolate cake recipes for the reason it adds richness. Needless to say, these were incredible!!!!
