Healthy Cinnamon Croissants with icing

Ingredients You’ll Need

Dough:
1 cup almond flour
1 tablespoon baking powder
1/4 teaspoon pink salt
8 ounces shredded mozzarella
2 ounces cream cheese
1 egg

Cinnamon Butter:
1/2 cup melted butter
1/2 cup brown erythritol or swerve
2 teaspoons cinnamon

Icing:
2 tablespoons cream cheese
1/4 cup powdered erythritol or swerve confectioners
1 teaspoon vanilla extract
2 tablespoons heavy cream

How to Make Sugar Free Healthy Croissants

  1. Combine the mozzarella and cream cheese in a heat-proof microwave safe bowl. Microwave in 30-second intervals until fully melted. This should only take about a minute.
  2. Mix in the egg into the cheese mixture.
  3. In a separate bowl, mix together almond flour, baking powder, and pink salt.
  4. Place the dry ingredients into the melted cheese mixture while it’s still warm so it incorporates easily.
  5. Lay out a piece of parchment paper or a silicone mat and knead the dough into a ball.
  6. Once the cheese dough is nice and smooth, use a rolling pin to roll it out about 1/4 inch thick in a rectangle shape.
  7. Use a butter knife and cut the dough longways down the center to create two long stands of dough.
  8. Then cut a triangle on each strip to make small triangle shapes you will eventually roll into croissants.
  9. In a separate bowl add the melted butter, brown erythritol, and cinnamon and mix until combined. Brush mixture generously onto each triangle.
  10. Roll the croissants up and place them on a baking sheet with parchment paper or a silicone mat.
  11. Bake for 25-30 minutes at 350 degrees.
  12. While the croissants are baking make the icing.
  13. In a small bowl whisk all ingredients for the icing.
  14. Once the croissants are done, remove them from the oven and drizzle icing on top.
  15. Serve warm or cold.
