Low Carb Chicken Enchilada Casserole Recipe Ingredients
- 1 pound boneless chicken breast cooked and shredded
- 1 1/2 cups of enchilada sauce
- 1 can of green chilies
- 1/2 cup of sour cream
- 1 small can of sliced black olives
- salt and pepper to taste
- 1 tablespoon of dried oregano
- 2 cups of shredded cheddar cheese
- 1/4 cup of fresh cilantro chopped to garnish
- 1/2 cup of queso fresco crumbled to garnish
Low Carb Chicken Enchilada Casserole Recipe Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl mix together chicken, enchilada sauce, chilies, seasonings, olives, and sour cream together.
- To a greased 9×13 pan, add in chicken mixture. Coat with an even layer of cheese and bake for 25 minutes, or until cheese has melted and is bubbly.
- Remove from oven and garnish (optional) with olives, queso fresco, cilantro, sour cream, and avocado slices.
