Loaded Keto Fried Rice made on the Black Stone Griddle Grill

Check out our Loaded Keto Fried Rice made on the Black Stone Griddle Grill!  We made this keto fried rice with cauliflower but don’t turn your head up just yet.  I can promise you that this doesn’t even taste like cauliflower at all!

The right amount of seasonings and the cauliflower will take on the flavor of anything you are trying to make it.  This is why this recipe is perfect.  The flavors and seasonings are on point.

First fried rice substitute ingredient we used is cauliflower in place of regular rice because we are making this a keto friendly meal and low carb in the lowest amounts possible without losing the taste.

However, the second ingredient  in this keto fried rice recipe we used as a substitute was Liquid Aminos because we try and avoid soy sauce.  Not because of the carb counts but rather because of the effects it has on our journey.

Liquid Aminos is one of my favorite soy sauce substitutes.  Soy has wreaked havoc on our bodies so I try really hard to stay away from soy in general.  If soy products or ingredients don’t bother you, then you are welcome to use soy sauce in place of the liquid aminos that I used.

If you have any type of thyroid trouble (in men or women) than I would absolutely stay away from soy products.

If you are male and have trouble with testosterone, soy is definitely not for you either.

You can purchase liquid aminos at your local grocery store.  You can’t even tell it’s not soy sauce, honestly.  It’s found in the balsamic and vinegar section of the store.  This is where I get the next ingredient, rice vinegar too.

Soy is definitely a controversial topic and it’s not the point of this article.  I simply want to point out that you can use liquid aminos if you are trying to stay away from soy.

But soy sauce in general is keto friendly and you are welcome to use that if you want also.

Loaded Keto Fried Rice Recipe Ingredients

Makes 8 servings

 

  • 2 – 12 oz bags frozen cauliflower rice
  • 1/2 pound ground beef
  • 1/2 lbs ground sausage
  • 2 tbs olive oil
  • 2 tbs toasted sesame oil
  • 1 tbs garlic rice vinegar. (Or plain with 1 tsp minced garlic added)
  • 12 oz bag of mixed vegetables
  • 3 tbs liquid Aminos (or more as you like)
  • 2 to 3 eggs
  • Optional Topping:  Green onions, sliced

Just before serving it we added on some green onions for extra flavor.

When you purchase a frozen bag of mixed veggies, you can’t always control which veggies are in there.  Ours had corn and peas.  You can choose to eat whichever veggies you feel are right for your own keto journey.

Equipment

  • 36" Black Stone Griddle Grill

Ingredients
  

  • 2 12 oz bags frozen cauliflower rice
  • 1/2 pound ground beef
  • 1/2 lbs ground sausage
  • 2 tbs olive oil
  • 2 tbs toasted sesame oil
  • 1 tbs garlic rice vinegar. Or plain with 1 tsp minced garlic added
  • 12 oz bag of mixed vegetables
  • 3 tbs liquid Aminos or more as you like
  • 2 to 3 eggs
  • Optional Topping: Green onions sliced

Instructions
 

  • Preheat griddle on medium heat.
  • Cook ground beef and ground pork till browned.
  • While the beef and pork is still slightly pink, push the meat mixture to one side of the griddle to allow room to make the rice portion of this dish.
  • The griddle is slightly tilted so the grease will flow to the back to the drip tray.
  • You will start cooking the rice when the meat is about half way cooked.  This will allow the rice and the meat to finish cooking at the same time.
  • Add the frozen cauliflower rice on the hot grill and drizzle it with olive oil, toasted sesame oil, and rice vinegar.
  • Chop the rice and mix while flipping it with a spatula until it’s fully heated.  This will only take about 5 minutes over medium heat.
  • Pour the frozen bag of veggies over the rice mixture and top with liquid aminos.
  • Mix and cook until it’s fully heated.
  • After it’s fully heated, make a circle in the middle of the rice mixture.  This is where you will cook the eggs.
  • Crack two to three eggs in the middle of the rice mixture and use your spatula to scramble them.
  • Place a cooking cover over the rice egg mixture to steam the eggs.  This will only take about two minutes.
  • Remove the cover and mix the meat with the rice and serve warm.
  • Top with green onions, if using.

Notes

Reheats nicely in the microwave and makes perfect leftovers if you are trying to save time cooking in the kitchen.

    Best thing ever! We have swapped out canned chicken for the ground beef, and added a little shrimp. This time we used the mushroom risotto version of the rice and added some extra frozen green beans and fresh sautéed mushrooms instead of the mixed veg. So yummy!

    Kudos for the recipe!
