Keto Diced Chicken Parmesan Casserole Recipe made in a cast iron skillet

For many people, eating Keto can be the best thing they ever do! However, they still miss certain foods. Chicken Parmesan can be one of them. With the breading and the noodles that are often eaten with it, the traditional Chicken Parmesan Recipe is far from being Keto Friendly. But with this recipe, you can have Keto Chicken Parmesan and not lose the progress you have made and not feel guilty about it.

Keto Chicken Parmesan Casserole Ingredients

Keto Chicken Parmesan Casserole Instructions

  1. Preheat oven to 350°F.
  2. In a cast iron skillet, place olive oil in the bottom of the skillet to coat the pan.
  3. Add in chicken breasts.
  4. Sprinkle chicken with salt, pepper, Italian seasoning, onion powder and stir to combine.
  5. Once the chicken has cooked through (can be slightly undercooked as it will finish in the oven) stir in red pepper flakes and marinara sauce. Ensuring the marinara is evenly distributed.
  6. Top the chicken with pork rinds, Parmesan, mozzarella and dried basil.
  7. Pop in the oven for 15 minutes to melt the cheese.
  8. Broil for 5 minutes to get the cheese a nice golden brown color.
  9. Serve and enjoy!

NOTE: If you don’t have a cast iron pan, make the chicken in a regular skillet. However, you’ll want to place the chicken mixture into an 8×8 casserole dish after you’ve coated with the marinara and the seasonings. Top with the pork rinds, Parmesan, mozzarella cheese and basil. Bake for about 20 minutes for the cheese to melt and broil for 3-5 minutes until you get a golden color on top of the cheese!

    Good, but 4 servings is a _lot_ of food and protein. We had to cut servings down a bit because it was way larger than we expected.

    Sadly, I put it too close to the broiler and even 2 minutes was too long, but it was still tasty. I’ll probably make this again at some point, maybe a little more olive oil and cheese, with better attention to the broiling if we do that.

    1. And made variations on this with some pre-cooked shredded chicken by combining everything into a pan and baking at 350 for 25-30 minutes, then broiling a little at the end. It’s worked well. It’s definitely a tasty and quick recipe to prepare and satisfies _some_ of those Chicken Parm cravings. 🙂
