Easy Rueben In A Bowl Recipe
Classic Rueben taste, but keto-friendly, this Easy Rueben In A Bowl Recipe is everything you love about the real thing without the carbs! Delicious and easy to make, this is a great lunch or dinner idea to have any day of the week.
Easy Rueben In A Bowl Recipe Ingredients
- 2 – 10 ounce packages of sliced coleslaw (I user angel hair)
- 3 tablespoons olive oil
- 2 pounds corned beef (sliced from the deli) or homemade from this Instant Pot Corned Beef Recipe
- Salt
- Pepper
- Garlic powder
- Butter
- 1/2 cup Swiss cheese, shredded
- Drizzle with Thousand Island Dressing
Note: You can also use sauerkraut in place of the coleslaw too.
Easy Rueben In A Bowl Recipe Instructions
- In a large frying pan over medium heat, add the olive oil and angel hair coleslaw cabbage. (Or substitute for sauerkraut here if using)
- Cook for about 5 to 7 minutes or until the cabbage has become slightly translucent.
- Shred the Corned beef deli meat and add it to the cabbage.
- Add salt, pepper, garlic powder, and butter.
- Cook until everything has warmed and the butter is fully melted.
- Sprinkle Swiss cheese over the top of the cooked cabbage.
- Once the cheese has fully melted it’s ready!
- Serve and drizzle with thousand island dressing just before consuming.
- Serve with a Keto Rye Bread Chaffle!
