Low Carb Garlic Shrimp with Zoodles is the bomb! Anyone who tries this recipe is going to fall in love with the taste of the garlic shrimp and the zoodles. Shrimp is a yummy low carb option that many people don’t really think about.
Low Carb Garlic Shrimp with Zoodles Recipe Ingredients
- 1 tablespoon of olive oil
- 1/2 onion, chopped
- 1/2 pint of grape tomatoes, sliced
- 1 cup of sliced mushrooms
- 3 cloves of garlic, minced
- salt and pepper to taste
- 1 pound of large cooked shrimp tails on and deveined (fresh or frozen)
- 1 lemon sliced Parmesan cheese shavings, to garnish
Low Carb Garlic Shrimp with Zoodles Recipe Instructions
- In a large pan over medium-high heat, add in olive oil and warm.
- Next, add in onions and cook two minutes, or until softened.
- Add in tomatoes, mushrooms, garlic, and salt and pepper.
- Mix together 2 minutes, then add in shrimp and lemon slices. Stir often until shrimp has heated through.
- Toss in zucchini, fold into the veggie mixture and warm through before serving.
Note: After vegetables and shrimp have warmed through, if there is excess liquid from shrimp, feel free to drain some before adding in the zucchini.
