Keto Chicken Enchilada Recipe

I’m so excited about this Keto Chicken Enchilada Recipe I could jump for joy!!

This is also a really good recipe you can use when you have leftover chicken too! Did you know they sell precooked shredded chicken at Costco?! They even carry it at my local grocery store too. I tell you this because with a little prep ahead of time, you could whip this meal up in no time at all!

This is a photo of the very first test batch of keto enchiladas I made.  The family nearly devoured all of them before I could make a bigger batch!  They immediately asked me to make more.  This is exactly how I test recipes.  In small batches like this.

Can I Use Store Bought Enchilada Sauce?

You do have the option to use a Red Enchilada Sauce that’s premade to make dinner super easy but I will warn you, there are some ingredients in there that are not necessarily keto friendly. I used to use Old El Paso Red Enchilada Sauce because it tastes amazing. It has modified corn starch, soybean oil, sugar, and hydrolyzed corn protein in it. Those are ingredients that I really try to stay away from.

Now, on the flip side, I will buy the red enchilada sauce if I am in a pinch. It’s a way better option than a full on cheat. This is the thinking process that keeps me sane with doing keto! Sometimes I do a little lazy or dirty keto (as they say). It’s 20 calories and 4 g of carbs in a can of Red Enchilada Sauce.

The homemade Keto enchilada sauce we made came out absolutely amazing.  It’s really easy to whip up too.   The sauce recipe makes 3 full cups of sauce!  You can double it if needed too!

Are Store Bought Low Carb Tortillas Keto Friendly?

Store bought low carb tortillas are just that… low carb. They are not keto friendly because they are made with wheat and/or white flour. If you are practicing a low carb lifestyle then these store-bought low carb tortillas would be a good option for you. If you do lazy or dirty keto, these will also be an option for you. If you practice strict keto, I would stay away from low carb tortillas.

How to Make Keto Chicken Enchiladas

Keto Chicken Enchilada Recipe Ingredients

  • 3 tablespoons butter
  • 3 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pink salt
  • 1 – 8 ounce can tomato sauce
  • 3 tablespoons tomato paste
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon xanthan gum
  • 1 teaspoon Cocoa powder  Optional  but worth it to add an authentic depth of flavor
  • Note:  The enchilada sauce recipe makes 3 cups of sauce.  I always prefer to make it the day before to allow the flavors to set in!
  • 8 to 10 keto tortillas
  • 2 cups chicken, precooked and shredded
  • 2 cups cheese, shredded (cheddar cheese or Monterey jack cheese work great in this recipe!) and if you want a real Mexican food experience, top it with 1/4 cup crumbled cotija cheese!

 

Enchilada Sauce Instructions:

  1. In a medium-size saucepan, melt the butter first.
  2. Add the chili powder, garlic powder, onion powder, and salt until it forms a paste.
  3. Add the tomato sauce, tomato paste, and chicken broth. Stir well
  4. If you are unsure about adding the cocoa powder, taste the sauce here and add a tiny amount in a spoon to see the difference!
  5. Once the ingredients are fully combined, add the xanthan gum by sprinkling it slowly over the mixture.
  6. The mixture will thicken as it cools.

 

Enchilada Instructions:

  1. Fill each keto tortilla with a layer of shredded chicken and cheese.
  2. Roll it up and place it faced down in a baking dish.
  3. Continue to fill and roll the remaining keto tortillas as instructed.
  4. Pour the enchilada sauce on top of the rolled enchiladas.
  5. Sprinkle the remaining cheese over the top.
  6. Bake uncovered for 25 to 30 minutes until the center has fully cooked.
  7. You can top these enchiladas with diced avocado, shredded lettuce, sour cream, and jalapenos.

 

This is not the only recipe we add a bit of chocolate to add a depth of flavor. We also add a bit of Cocoa powder to this Keto Chili Recipe. Once you try it, you will always make it this way. It’s an old technique that I still use to this day!
