There are so many ways for a good char, but grilling is my FAVORITE, all the time! Don’t get me wrong, this chicken will still be super tasty in the good ol’ oven as well. Because, well.. Bacon.

 

Bacon wrapped anything, will always go over well in my house. A tender, juicy and smoky entree that you will want to make every single week (by request). Trust me, I know!

Makes: 4 servings

 

Bacon Wrapped Guacamole Stuffed Chicken Recipe Ingredients

 

16 oz. Boneless Skinless Chicken Breast

12 oz. Bacon slices (uncured, Not Smoked)

2 large Hass Avocado

1/2 c. Pico De Gallo

1 tbs pickled jalapeno juice (optional)

4 oz Gouda Cheese sliced (or cheese of choice)

Pinch of salt and pepper

 

Bacon Wrapped Guacamole Stuffed Chicken Recipe Instructions

 

  1. Par-baking the bacon is optional, but recommended.
  2. Preheat the oven to 400 degrees.
  3. Add bacon slices to a baking sheet, bake for 10 minutes.
  4. Remove and let cool.
  5. (If grilling) Preheat the grill to med-high.
  6. OR raise oven heat to 425 degrees.
  7. Slice chicken lengthwise, not all the way through.
  8. Pound out slightly to thin, then sprinkle with salt & pepper.
  9. In a medium bowl- scoop out the avocado flesh and smash.
  10. Add Pico De Gallo and jalapeno juice, season to taste.
  11. Spread mixture evenly over one side of chicken.
  12. Add sliced cheese over mixture.
  13. Close over chicken and tightly wrap around bacon slices.
  14. Add wrapped chicken to a baking sheet or foil.
  15. Grill for 35 mins or bake in the oven for 35-45 mins.
  16. Remove and let cool before slicing.
  17. Enjoy!

Additional Notes:

It took 3-4 slices of par-cooked bacon to wrap each LARGE chicken breast. Your amount will depend on how big the chicken breast pieces are. I recommend par-baking the whole package of bacon, to ensure there is enough.

If choosing to oven bake: par-bake the bacon @ 400 degrees for 10 mins, remove and set aside. Turn up the oven to 425, then bake the wrapped chicken for 35-45 mins (depending on how hot your oven runs and how large the chicken pieces are).

When I’m grilling, I love using this Heavy Duty Non Stick Foil. It works beautifully and less messy clean up!
