Firing up the barbecue seems as though it would only be a summer thing, but that just isn’t true! I personally make a point to use a variety of cooking techniques, no matter what the weather. A conventional oven doesn’t have to be your only option.

There are so many ways for a good char, but grilling is my FAVORITE, all the time! Don’t get me wrong, this chicken will still be super tasty in the good ol’ oven as well. Because, well.. Bacon.

Bacon wrapped anything, will always go over well in my house. A tender, juicy and smoky entree that you will want to make every single week (by request). Trust me, I know!

Throw on a steamed vegetable side with some melty cheese (like this Keto Cauliflower Mac and Cheese). You have a fantastic low carb meal your whole family will love! Check out the recipe, and it won’t disappoint.

Additional Notes:

It took 3-4 slices of par-cooked bacon to wrap each LARGE chicken breast. Your amount will depend on how big the chicken breast pieces are. I recommend par-baking the whole package of bacon, to ensure there is enough.

Hey, if there is any left over, that just means a little snack for you or leftovers for later!

If choosing to oven bake: par-bake the bacon @ 400 degrees for 10 mins, remove and set aside. Turn up the oven to 425, then bake the wrapped chicken for 35-45 mins (depending on how hot your oven runs and how large the chicken pieces are).

When I’m grilling, I love using this Heavy Duty Non Stick Foil. It works beautifully and less messy clean up!

  1. I have Guac that comes in little containers that I use on my Tacos. Do you think that would work in this recipe?

    Thanks, Janet
