Look at this Keto Boston Cream Pie Chaffle Cake Recipe!!  Most of you know Cheryl from the Keto Chaffle Recipes Facebook group.  She is a contributor to the blog and an amazing cook!  She loves to share her keto and low carb friendly recipes to help others stay on track with their healthy eating journey just as much as I do.  I am honored that she shares her creations on the blog with all of you!  She knocked this one out of the park with her love for Boston Cream.

She used a mini waffle maker to make this delightful Boston Cream Pie Keto dessert.  She starts the base with my Keto Birthday Cake chaffle recipe!  That recipe is the perfect base for any cake you want to make honestly.

CAKE Recipe:
Use this Keto Birthday Cake Chaffle recipe to make the cake part first.  You will need to substitute  20 drops of Bavarian Cream Flavoring for the Cake Batter flavoring.  We’ve included the ingredients and the instructions below.  Please note, this Boston Cream Pie Chaffle Cake is definitely higher in the carb count but still extremely low carb for a dessert of this nature!  If you prefer a lighter cake with fewer carbs, just make the birthday cake recipe!  But I can see, this is definitely a treat I will make once in a while!

Keto Boston Cream Pie Chaffle Cake Recipe Ingredients

Chaffle Cake Ingredients:

(makes mini four cakes)

Custard Ingredients:

  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon Vanilla extract
  • 1 /2 tablespoon Swerve confectioners Sweetener
  • 2 Egg Yolks
  • 1/8 teaspoon Xanthan Gum

Keto Boston Cream Pie Chaffle Cake Recipe Instructions:

  1. Preheat the mini waffle iron to make cake chaffles first.
  2. In a blender, combine all the cake ingredients and blend it on high until it’s smooth and creamy.  This should only take a couple of minutes.
  3. On the stovetop, heat the heavy whipping cream to a boil. While it’s heating, whisk the egg yolks and Swerve together in a separate small bowl.
  4. Once the cream is boiling, pour half of it into the egg yolks. Make sure you are whisking it together while you pour in the mixture slowly.
  5. Pour the egg and cream mixture back into the stovetop pan into the rest of the cream and stir continuously for another 2-3 minutes.
  6. Take the custard off the heat and whisk in your vanilla & xanthan gum. Then set it aside to cool and thicken.
  7. Put ingredients for the ganache in a small bowl. Microwave for 20 seconds, stir. Repeat if needed.  Careful not to overheat the ganache and burn it.  Only do 20 seconds at a time until it’s fully melted.
  8. Assemble your Boston Cream Pie Chaffle Cake and Enjoy!!
