How do you keep coleslaw crunchy?

Coleslaw is one of my favorite summer side dishes. It’s a great low carb and keto option when you want to enjoy something crunchy without the guilt! You can make this dish in advance, cover it with plastic wrap or foil tightly at room temperature if serving within an hour.

Is coleslaw better the next day?

I love to enjoy coleslaw the next day if there is any leftover! Most of the time, my family and I gobble it up so quickly especially in the Texas heat of summer. But yes, in my opinion, coleslaw tastes so much better the next day because the flavors have had a chance to soak into the vegetables.

How do you store leftover loaded keto coleslaw?

I store my leftovers in an airtight container, like a Tupperware with the lid on it. Be sure to refrigerate your coleslaw after you’ve stored them for up to three days!

Why does coleslaw get watery? And how do you fix it?

If you are making a vinegar based coleslaw, it can get watery because of the acid in vinegar. If you make coleslaw with mayonnaise, it won’t get as watery! But it can. If your coleslaw gets watery, you can fix it a little more mayonnaise or vinegar.

Personally, I drain off some of the watery mixtures and add more mayo or vinegar to it if needed.

Loaded Keto Crunchy Coleslaw Recipe Ingredients

  • 1/4 white cabbage
  • 1/4 red cabbage
  • 4 carrots, small ones
  • 3/4 cup mayonnaise
  • 2 tablespoons white wine vinegar
  • 1/4 cup chopped shallots (just the green part) or chives
  • 1/2 cup chopped walnuts
  • 2 tablespoons pumpkin seeds (optional)
  • Salt and ground pepper to taste

 

Loaded Keto Crunchy Coleslaw Recipe Instructions

  1. Chop cabbage into thin slices and shred carrots. Place them in a big salad bowl.
  2. Chop the green part of a shallot, fresh chives would work perfectly well too.
  3. Chop the walnuts into small pieces.
  4. Bring all the ingredients to the salad bowl. Toss veggies with vinegar and mayonnaise. Add some salt and ground pepper adjusted to taste.
  5. Serve immediately!
