I’m so excited to share this new keto friendly chorizo breakfast egg muffins recipe with you today. They are so good and easy to make!
Healthy breakfast egg muffins are perfect for of course…breakfast, but you can also enjoy them for lunch or as an on the go keto snack. We love making these on Sunday evening so we have breakfast or a snack on the go ready at a moments notice.
The chorizo in these breakfast egg muffins gives them a Mexican food flare that everyone loves. I mean, who doesn’t love Mexican food? Right?

Chorizo Breakfast Egg Muffins Recipe Ingredients
- 10 Jumbo eggs (or 12 large)
- 1 tablespoon of milk
- 1 teaspoon of oregano or marjoram
- ½ teaspoon of minced dried onions
- salt and pepper (as desired)
- 1 tablespoon of freshly chopped parsley or cilantro
- 1 chorizo sausage link, finely chopped
- ½ cup of shredded cheddar cheese

Chorizo Breakfast Egg Muffins Recipe Instructions
- Preheat oven 350 degrees Fahrenheit.
- In a large bowl add all ingredients, except for chorizo and cheese.
- To a well-greased cupcake pan, add in an even layer of egg mixture to each cavity. Top with an even layer of chorizo and cheese.
- Bake for 15-18 minutes, or until eggs are set in the center.
