Let’s just say that if I can get my meat-eating husband to enjoy a cauliflower crust pizza, then I’m pretty sure this will be a hit with the pickiest of eaters in your household!  Not even kidding.   My husband walks in after the pizza is almost done and says “Whoa!  It smells really good in here, whatcha making?”  The minute I told him it was a keto-friendly and low carb cauliflower pizza crust he gave me the look.   You know the look I’m talking about, right?  The look like you are off your rocker and a bit crazy.  Yeah, that look.

I rolled my eyes and just asked him to try it.  He went back for seconds!  He liked it and he wasn’t just saying it!  He wanted me to make it again.

You know, this isn’t much harder than making the Keto Fat Head Dough Pizza recipe either.    That recipe is fantastic.  It makes the best thin crust pizza.  This cauliflower pizza crust recipe makes a thicker crust!  There’s even a way to make the cauliflower pizza crust crispy!!!!  Yes, that bottom crispy layer that we all miss so much!!

Let me tell you a couple of tips about the cauliflower before you dive into this recipe.  Making any recipe with cauliflower takes a ton of work when you make it from a head of cauliflower.  Luckily, if you are like me and want simple and easy recipes, then you might want to just purchase the frozen riced cauliflower bags in the freezer section of your local supermarket.  I had three different options at my grocery store.  Bird’s Eye brand, Green Giant Brand, and an Organic Great Value Brand which was the cheapest option at only $1.87 per 10 oz bag!!  I bag of riced cauliflower makes a medium size pizza using a 12″ inch pizza pan!

medium 12″ inch Pizza is normally cut into 8 slices and serves approximately 3-4 people.

You could also shape this recipe into 4 individual cauliflower pizza crust shapes if you are meal prepping for the week too.

Instructions

  • Preheat the oven to 350 degrees.
  • Defrost the bag of frozen cauliflower. The goal for this cauliflower is to get as much liquid out of the vegetable as possible.  To do this, you can microwave the frozen cauliflower in a steamable bag for 5 minutes and then put the cauliflower in a frying pan with no oil and heat it until all the liquid has been removed.
  • The cauliflower will stop sizzling when all the liquid has evaporated.  This may take about 5 minutes frying it over medium heat.  Place a 1/2 teaspoon of salt in with the cauliflower to help it along.
  • Once the cauliflower stops sizzling start adding the Italian seasoning blend, garlic powder, and onion powder to the cauliflower.  Mix it until the seasonings are fully combined.
  • Turn off the heat and place the cauliflower in a medium bowl to cool down for a minute or two.
  • Add the pork panko, parmesan cheese, mozzarella cheese, and 2 eggs to the warm cauliflower mix.  Mix it until it fully comes together.
  • Cover a 12-inch pizza pan with parchment paper.  This step is very important.  You don't want the cheese in this recipe to stick to the pan so parchment paper is required even if you use a non-stick pizza pan.
  • Spread a small amount of shredded parmesan cheese on top of the parchment paper if you want a crispier crust.
  • Place small spoonfuls of dough around the pizza pan.
  • Use a fork or your hands to spread the cauliflower mixture into a pizza shape.  Press the edges a bit thicker to make a crust bump to hold the toppings.
  • Sprinkle the remaining shredded parmesan cheese on top of the crust.
  • Bake it at 350 degrees for about 15 minutes or until the crust is golden brown.
  • All the dough to cool for about 5 minutes before adding the toppings.
  • Spread a thin layer of sugar free marinara sauce over the cooked pizza dough.
  • Top it with shredded mozzarella cheese and finish the pizza toppings with a layer of pepperoni (or other toppings of your choice).
  • Bake for an additional 5 minutes which will be just long enough to melt the toppings.
  • Allow the pizza to cool for about 5 minutes before enjoying it.  The crust will set and it won't be too terribly hot to handle but yet warm enough to enjoy!
