Dill Cucumber Salad Recipe
Looking for a healthy cold side dish? Here ya go! This Dill Cucumber Salad Recipe is FANTASTIC and so easy to make. Ready in minutes with simple ingredients, you can make this ahead of time and it stores well too!
This is one of my favorite keto summer salad recipes! We used mayonnaise in this recipe but you can also substitute it for unflavored Greek yogurt as well. The Mayo that we use is a brand called Duke’s with no sugar added.
Dill Cucumber Salad Recipe Ingredients
- 6 medium cucumbers
- 1 tablespoon salt
- 1 tablespoon apple cider vinegar
- 1 tablespoon white vinegar
- 1 teaspoon onion powder
- 1 teaspoon garlic, minced
- 1 teaspoon pepper
- 1 tablespoon fresh dill
- 1 cup mayo
Dill Cucumber Salad Recipe Instructions
- Slice the cucumbers.
- Salt cucumbers in a bowl and set in the fridge for about 15 minutes. Drain the liquid.
- In a medium bowl, add the diced cucumbers, apple cider vinegar, white vinegar, onion powder, pepper, dill, and mayo.
- Mix well and chill for about 1 hour.
- Serve cold.
