This recipe evolved from my 90 Second Bread Keto Baked Bagels Recipe. I wanted to make something similar but in a loaf. It’s still fall, so of course, there needed to be some pumpkin included.
Not everyone enjoys the season of everything pumpkin, but thankfully my family does! I have been working on so many different Keto/Low Carb sweets and baked goods. Trying to recreate some of my favorites but in a healthier fashion.
So many ideas, so little time. Now is the (BEST) time to test all of these wonderful ideas out and see what is going to be the winners for the holiday get-togethers. This bread is delicious and will be a BIG hit, I promise you!
I made 4 beautiful mini loaves. Here’s the Wilton Recipe Right Non-Stick Mini Loaf Pan, 4-Cavity I used. There is also a really cool Wilton Easy-Flex Silicone Mini Loaf Pan for Bread, Cakes, and Meatloaf, 4-Cavity (I added to my Christmas wish list).
You could also use mini loaf foils or a regular bread loaf pan. If using a regular pan, the bake time will be longer.
After baked, I sliced each loaf into 12 slices. These are perfect for a nice treat by themselves or to bring to the table for the Holiday feast! Make ahead of time, they are still very good when kept in the fridge. Cold or warmed up, I really like it either way.

Keto Pumpkin Spice Bread Mini Loaf Recipe Ingredients
- 6 tbs Butter, Unsalted
- 1 c. Blanched Almond Flour by Nature’s Eats
- 1/4 c. Organic Coconut Flour
- 1 tbs Baking Powder
- 6 Large Eggs (beaten)
- 1/4 c. 100% Pumpkin, canned
- 1 tbs Organic Coconut Oil
- 1 tsp Homemade Pumpkin Spice Blend
- 1 tsp Pure Vanilla Extract
Keto Pumpkin Bread Mini Loaf Recipe Instructions
- Preheat oven to 350 degrees.
- In a medium mixing bowl- Whisk together all dry ingredients.
- In a large mixing bowl- add butter, coconut oil. Warm for 30 seconds in microwave.
- Add canned pumpkin, vanilla and beaten eggs. Mix well.
- Add dry ingredients into the wet and mix until well incorporated.
- Spread batter evenly into 4 mini bread loaf pan or foils.
- Bake on middle rack for 25-30 minutes.
- Let cool in pan for a few minutes before popping out.

- 1/2 c. Pyure Stevia Blend
- 1 tbs Baking Powder
- 1 tsp Homemade Pumpkin Spice Blend
- 1/4 tsp Pink salt
- 6 Large Eggs beaten
- 6 tbs Butter Unsalted
- 1 tbs Organic Coconut Oil
- 1/4 c. 100% Pumpkin canned
- 1 tsp Pure Vanilla Extract
Instructions

This pumpkin mini bread is so delicious! Will make again.they freeze well.
The BEST Pumpkin Bread Bread Recipe EVER!!! Very flavorful and moist. No aftertaste because of the Sweetener. My Husband couldn’t believe it! It resembles his Mother’s Traditional (SAD) Pumpkin Bread Loaf recipe. He needed something to help for the holidays. It will be the 1st year that we would have been without her presence. She passed away in the middle of May 2019. Jennifer’s recipes never fail!!!
