Keto Wonder Bread Chaffle Recipe (Coconut and Almond Flour Recipe Versions)

I love the Keto Wonder Bread Chaffle Recipe so I decided to do a bit of testing in my kitchen today to see which version is the best!  There are a few differences when you compare the two and I am happy to share them with you.

There’s so much talk about the Wonder Bread recipe and so many people make it so many different ways.  I make it using Dukes Mayonnaise.  It’s probably the closest thing to real white bread I’ve had since going keto!

I’m going to include both versions of this recipe that I use.  The reason for two different variations is for a couple of different reasons.  First, there are lots of people that have nut allergies and use coconut flour as a replacement to almond flour.  Then, on the other hand, there are some people that cannot stand the taste or smell of coconut flour and prefer to use almond flour.  Whichever your preference is, this recipe will be useful to you.

Here’s another helpful tip.  If you don’t have Dukes Mayo on hand you can substitute the same exact amount of sour cream and the recipe comes out the same!

Just look at the differences in this photo!  The top photo shows the coconut flour version.  You can see it’s a bit thicker than the almond flour version below it.

Wonder Bread Chaffle Recipe using Almond Flour

Ingredients:

Instructions:

Mix all the ingredients together in a small bowl.  Pour half the batter into a mini dash waffle maker and cook for about 3 1/2 to 4 minutes or until golden brown.

Makes two mini wonder bread chaffles.

Almond Flour Version Notes:

Takes between 3 and 4 minutes to cook.

Tastes more eggy than the coconut flour version.

The almond flour version tends to be a bit thinner than the coconut wonder bread recipe.

Reheats nicely in the air fryer, toaster, or toaster oven.

Add them to a freezer friendly ziplock bag or container in between parchment paper to freeze them for later too.

  2. Allow the batter to sit for about a minute to thicken and stir it again.
  3. Pour half the batter into a mini dash waffle maker and cook for about 2 1/2 to 3 minutes or until golden brown.
  4. Makes two mini wonder bread chaffles.

Coconut Flour Version Notes:

  • This coconut version takes only about 2 1/2 to 3 minutes to cook.  Less time than the almond flour version.
  • The batter is a bit thicker and requires a bit more water than the almond flour version because coconut absorbs liquid more than almonds.
  • The cooked version does not have an eggy taste at all.
  • This wonder bread is thicker than the almond flour version.  It will hold up nicely used as a burger bun for a juicy burger!
  • No coconut taste.

Either version makes for a delightful sandwich!  This is the wonder bread recipe with sliced roast beef, provolone cheese with a bit of mayo and dijon mustard!  Absolutely delicious!

This bread tastes amazing toasted too!  My kids devour peanut butter and sugar free jelly sandwiches especially when I pop the bread in the toaster oven for 4 minutes to heat up with a light golden toast!

How To Freeze Chaffles?

This might be the number 1 asked question in our Facebook group.  How to freeze chaffles?  Actually, it’s very easy!  You can use a freezer friendly ziplock baggie or a freezer friendly container.  To prevent the chaffles from sticking (or freezing together) you can simply place a sheet of parchment paper between the chaffles.  This allows them to be removed one by one while frozen.  They don’t take long at all to defrost or you can warm them up in a toaster oven or air fryer too!  Easy, peasy!

    1. I saw my children having chocolate chip waffles so I recreated it with coconut flour & sugar free chocolate chips! 😜

    1. I double the recipe and use my regular waffle maker. It makes four 4” chaffles. I refrigerate the ones I don’t use in a zip lock bag.

    I made the coconut flour version: fun, better bread alternative, just make SURE to well oil the waffle iron.

  3. Question – just bought the dash mini waffle maker and want to try these. Do Iuse any type of spray Pam or oiling agent of some type first so they don’t stick? I don’t want to ruin it before I’m started

    1. No, I don’t need to spray the mini waffle maker. I have heard that some people do have to spray it with non stick cooking oil but only if they have an older waffle maker.

    2. I don’t use any spray. They come out easily as the cheese has fat in it. Also, Dash now has a 4 welled round maker now. I love it it.

    I just started Keto three weeks ago and have been craving a burger WITH BUN. This recipe was AH-MAY-ZING. It’s the best bread replacement. My veggie burger with cheese, tomato, lettuce and pickle on a “wonder bread” chaffle was positively delicious. This recipe is a definite keeper. THANK YOU! P/S I have a regular waffle iron so I doubled the recipe. Two of the four waffle squares was ideal for one sandwich.

  5. I love this recipe because I miss bread so much…especially sandwiches & hamburgers with a bun. I’ve made many times (with the coconut flour) and they come out perfect. I read somewhere you can substitute Greek yogurt for the mayo. Don’t! They do not come out tasting as well. (IMHO) More like a 5/10 vs 10/10 with the original recipe.

    Oh my. I made the coconut flour recipe. This was so good. I devoured this for breakfast. I used my regular waffle maker. The batter fit in perfect.

    i get the same results with coconut flour waffles vs. almond flour waffles, thicker and tastier. I prefer the coconut flour version better.

  9. I just used the almond flour batter to make pancakes and they were amazing. I added a little nutritional yeast because I like adding that in for flavor in things. Also while I’ve used them with my waffle maker i wanted to try doing it as a pancake. It was amazing. Topped with a little butter and sugar free syrup and it may have been one of the best pancakes I’ve ever had!

    Thank you sooo much for posting this. Really. We are new to keto and this is so far one of our favorite items. Will for sure be adding it to my book of regularly used recipes.

    The coconut one is the best waffle I’ve had in a long time. Tastes like the old time wheat ones, only better! I used my homemade mayo and it was fine. I will try making it for bread soon as so many bread recipes do not satisfy. I am pretty sure this one will!! Thanks for great recipes……
