The Easiest Keto Pecan Snowball Cookies Ingredients

 

Keto Pecan Snowball Cookies Ingredients

  • 1 cup almond flour
  • 1 cup finely chopped pecan
  • 5 tablespoons Swerve powdered sweetener
  • 1 stick melted butter salted
  • 1 teaspoon vanilla

 

Keto Pecan Snowball Cookies Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium-size bowl, mix all ingredients together. The mixture will be crumbled.
  3. Roll about 1 tablespoon cookie dough into a ball and place them on a cookie sheet lined with parchment paper.
  4. Place the cookie sheet with cookie dough balls in the refrigerator for about 30 minutes.
  5. Remove from the refrigerator
  6. Cook in the oven at 350 degrees for 10 minutes.
  7. Let them cool for 10 minutes on a cookie cooling rack.
  8. Lastly, roll them in the Swerve powdered sugar.
  9. Enjoy!

Makes about 26 cookies.

    After sitting a couple hours, these cookies were amazing!
    I had a couple challenges. First, trying to figure out if the confectioners sugar went in the mix as one of “mix all the ingredients together”, or whether to save all of it for rolling the cookies.

    I measured the cookies out with a tablespoon, and there were only 18, not 26.
    And lastly, they were incredibly crumbley, some just broke apart when I went to roll them.

    They weren’t as pretty as the ones pictured, but at the gathering, everybody raved! And 5 people (out of five, lol) wanted the recipe. This one is a keeper!
