Keto Spicy Chicken Cauliflower Fried Rice Recipe

If you love and miss fried rice, you are going to absolutely love this Keto Spicy Chicken Cauliflower Fried Rice Recipe! It tastes just like the takeout you miss, but you make it home and it’s keto-friendly too!

This Spicy Cauliflower Rice recipe is best cooked on an outdoor griddle grill but you can use a frying pan or wok also. The best part…this one skillet dinner is fantastic, easy to make and you can’t go wrong with this simple keto recipe.

Keto Spicy Chicken Cauliflower Fried Rice Recipe Ingredients

  • 1 head cauliflower, diced
  • 2 teaspoons avocado oil
  • 2 tablespoons garlic, minced
  • 1 small white onion, diced,
  • 3 eggs, whipped
  • 1 teaspoon ginger paste or fresh ginger, minced
  • 3 tablespoons soy sauce or coconut aminos
  • Juice of 1 lime
  • 2 teaspoons toasted sesame oil
  • 2 green onions, sliced
  • 3 tablespoon sriracha or other hot sauce (more or less depending on how spicy you like it)
  • 2 cups cubed cooked chicken
  • Lime wedges, for serving plus salt and pepper

Keto Spicy Chicken Cauliflower Fried Rice Recipe Instructions

  1. Precook the chicken in an instant pot pressure cooker, on the grill, or over the stovetop. Cut the chicken breasts into cubes. Set aside.
  2. Cut all the vegetables before you start. Dice the onion. Then cut the cauliflower into small pieces. Add the cut-up cauliflower chunks to a food processor and pulse it long enough for it to be broken down into rice size pieces.
  3. Over medium heat, add the avocado oil and add the riced cauliflower. Cook it over medium heat for about 8 to 10 minutes or until the rice is soft.
  4. Just before the rice is done, add salt, pepper, garlic, and ginger. Then add the onion and cook it for another 3 to 4 minutes until the onions are translucent.
  5. Now add the pre-cooked chicken.
  6. Move the rice over so that you have enough room to add the eggs to scramble them in the same pan or leave space on the grill. Add a small amount of oil if needed. Cook until scrambled.
  7. Add the soy sauce or coconut aminos, sesame oil, and lime juice.
  8. Mix until fully combined and serve warm.
