Cheesy Roasted Vegetable Recipe
Rich in flavor, this Cheesy Roasted Vegetable Recipe is a delicious keto side dish that everyone will love. It’s simple to substitute ingredients make this an easy recipe to make at home while also keeping the picky eaters in mind!
Cheesy Roasted Vegetable Recipe Ingredients
Vegan Cheese Sauce
- 1/2 cup vegan cheese
- 1 non-dairy milk (soy, almond or cashew)
- 2 tablespoons nutritional yeast
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 2 tablespoons olive oil
- Salt and pepper to taste
Vegetables
- 4 cloves garlic
- 1 onion
- 1 large sweet potato or 1/2 head cauliflower florets (see note below)
- 2 carrots
- 1 zucchini
- 1/2 head broccoli
- 1 red bell pepper
- 1 cup cherry tomatoes
- 2 cups button white mushrooms
Note: If you are on a low-carb diet, the sweet potatoes are good to enjoy. If you are on a strict keto diet, the cauliflower is the best option.
Cheesy Roasted Vegetable Recipe Instructions
- Preheat the oven to 400 degrees.
- Chop onion and sauté for 2-3 minutes in a heated pan.
- Add chopped garlic and mushrooms sauté until onion is translucent and mushrooms are cook. Set aside.
- Chop carrots, red pepper, and sweet potatoes or cauliflower into florets in bite-size pieces. Also, chop the broccoli into florets.
- Bring those vegetables to boil for 10 minutes. They don’t need to be totally cooked, the cooking will finish in the oven.
- For the sauce, place all the ingredients into a saucepan stirring continuously until you get a thick-cheesy sauce.
- Place all the vegetables (including now the red pepper and cherry tomatoes) on a baking sheet then drizzle with the oil, season with salt and pepper.
- Set the vegetables in the oven for 10-15 minutes for the red pepper to tender. Then coat the veggies with the cheesy sauce and cook until everything is fork-tender.
