Keto BBQ Chicken Pizza Casserole Recipe Ingredients
- 1-2 large chicken breast, cooked and diced or shredded
- Sugar Free BBQ Sauce
Pizza Casserole Crust Ingredients
- 8 ounces cream cheese
- 3 eggs
- 1/4 cup parmesan cheese
- 1 teaspoon garlic powder
- 1 tablespoon Italian Seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
White Sauce Ingredients
- 1/2 cup mayo
- 1/2 teaspoon pepper
- 1 teaspoon parsley
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- 1/4 teaspoon garlic powder
- 1/2 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 3 tablespoons parmesan cheese, grated
- 1 tablespoon apple cider vinegar or white vinegar
- 5 drops liquid stevia
Toppings
- 1/2 cup to 1 cup Mozzarella Cheese, shredded
- Bacon Bits
Optional Pizza Toppings
- Mushrooms
- Green Bell Peppers
Chicken Cooking Instructions
Cast Iron Skillet Instructions:
Add 1 tablespoon of olive oil to a skillet and cook for 4-5 minutes on each side or until chicken reaches 165 degrees.
Instant Pot Instructions:
Add chicken and 3/4 cup of water or chicken broth (if chicken breast is 2 inches thick or less), lay the cooking rack in the Instant Pot, and place chicken on the rack. Pressure cook on high for 10 minutes and do a quick release.

- Add all the ingredients for the casserole crust into the blender and blend until combined.
- Pour into a 9 x 13 casserole dish lined with parchment paper.
- Bake at 350 degrees for 15 to 18 minutes until set.
- While baking, make the white sauce.
- In a small bowl, combine all the ingredients for the white sauce and mix until smooth and creamy.
- Remove the crust from the oven and spread the white sauce over the pizza crust.
- Shred the chicken and mix it in a bowl with a small amount of sugar free bbq sauce. Just enough to coat the chicken.
- Spread out the chicken over the white sauce.
- Add any other remaining topping choices.
- Add a final layer of mozzarella cheese.
- Bake for another 10 to 15 minutes until the cheese is fully melted and golden brown.
- Serve warm. Enjoy!
