Banana Pudding Chaffle Cake Ingredients
Pudding Ingredients
- 1 large egg yolk
- 1/2 cup heavy whipping cream
- 3 T powdered sweetener
- 1/4 – 1/2 tsp xanthan gum
- 1/2 tsp banana extract
Banana Chaffle Ingredients
- 1 oz cream cheese, softened
- 1/4 cup mozzarella cheese, shredded
- 1 egg, beaten
- 1 tsp banana extract
- 2 T sweetener
- 1 tsp baking powder
- 4 T almond flour
Banana Pudding Chaffle Cake Instructions
- Combine the heavy cream, powdered sweetener and egg yolk in a small saucepan.
- Whisk constantly until the sweetener dissolves and mixture thickens.
- Simmer 1 minute.
- Add the xanthan gum and whisk.
- Remove from heat and add a pinch of salt and the banana extract and stir well.
- Transfer to a glass dish and cover surface of the pudding with plastic wrap.
- Refrigerate.
- Mix all ingredients together.
- Cook in preheated mini waffle maker.
