Low Carb Lemon Garlic Chicken Recipe Ingredients
- 3 tablespoons of olive oil
- juice of 1 lemon
- 3 cloves of garlic, minced
- 2 teaspoons of dried oregano
- 1 pound of chicken thighs
- salt and pepper, as desired
- 1/2 pound of asparagus, cut into 2-inch sections, ends discarded
- 1 zucchini, sliced into half-moons
- 1 lemon, sliced
Low Carb Lemon Garlic Chicken Recipe Instructions
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl, season chicken with lemon juice, garlic, oregano, salt, and pepper.
- To a large cast iron skillet over medium-high heat, warm oil in the skillet. Add chicken and brown both sides, about 4 minutes on each side.
- Remove from heat, add in remaining ingredients, place in oven and cook for 30 minutes, or until chicken is cooked.

This was so good! I had everything on hand except asparagus so I threw in an extra zucchini instead! Delicious!
