Here’s a special tip for this recipe.  Notice it has cocoa powder in the taco meat recipe.  This is a trick that has been used in my family for a very long time.  It may seem a bit strange but it will intensify the flavors of the other seasonings in a way that is absolutely delightful.  We’ve used this same technique in our Quick Keto Chili recipe and it’s gotten rave reviews!  People love it and I’m sure you will too!

Keto Taco Chaffle Ingredients (makes 2 chaffles)

Chaffle Ingredients

  • 1/2 cup cheese (cheddar or mozzarella), shredded
  • 1 egg
  • 1/4 teaspoon Italian seasoning

Taco Meat Seasonings for 1 lbs of ground beef

I tend to make this in big batches so I always have some on hand!  I keep it in mason jars that I can seal and keep in my kitchen pantry.  Just add a little label to it and you are good to go.  It’s so easy to make taco meat seasonings that there’s no real reason to purchase the premade taco seasoning packets because they are loaded with not so good ingredients.

Keto Taco Chaffle Recipe Instructions

  1. Cook your ground beef or ground turkey first.
  2. Add all the taco meat seasonings.  The cocoa powder is optional but it totally enhances the flavors of all the other seasonings!
  3. While you are making the taco meat, start making the keto chaffles.
  4. Preheat the waffle maker.  I use a mini waffle maker.
  5. In a small bowl, whip the egg first.
  6. Add the shredded cheese and seasoning.
  7. Place half the chaffle mixture into the mini waffle maker and cook it for about 3 to 4minutes.
  8. Repeat and cook the second half of the mixture to make the second chaffle.
  9. Add the warm taco meat to your taco chaffle.
  10. Top it with lettuce, tomatoes, cheese, and serve warm!

Tip!  Be sure to use a taco stand to help you hold the tacos together and fill them up!  It keeps them in place before you serve them.  Or you can eat them as open-faced tacos too!

Keto Taco Chaffle Shells Pro Tip:  You can either use a taco stand to stuff the tacos or you can hang the hot chaffles over a skewer like this to give them the shape you want.  Once they cool, they will hold their shape.
