Since my family and I started the keto/low carb lifestyle a little over a year ago, we are always looking for healthier alternatives to our favorite meals. One of those regular meals on our menu nearly every week was pizza. Now that we have found these zucchini pizza boats, we get to enjoy a family favorite from our “past” way of eating in a more healthy version.

The really great thing with this low carb baked zucchini pizza boat recipe is that you can get the kids (even the younger ones) in the kitchen with you to make dinner. Low Carb Baked Zucchini Pizza Boats Recipe Ingredients

  • 3 zucchini sliced in half
  • 4 oz of tomato sauce
  • 2 teaspoons of Italian seasoning
  • 3 tablespoons of chopped pepperoni
  • 3 tablespoons of cooked ground sausage
  • 3 tablespoons of cooked crumbled bacon
  • 1/4 cup of mozzarella cheese shredded
  • 1/4 teaspoon of dried oregano seasoning

Low Carb Baked Zucchini Pizza Boats Recipe Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Create a shallow crevice in the zucchini, with a spoon, discard filling. Microwave zucchini for 2 minutes, to soften. Use a paper towel to soak up any moisture.
  3. In a small bowl, mix together tomato sauce with Italian seasoning. Add a tablespoon of sauce to each crevice of the zucchini, spread.
  4. Top with an even layer of meat on each zucchini boat.
  5. Layer an even amount of cheese and dust oregano on top of each boat.
  6. Bake for 15 minutes, or until cheese has melted.
