Tiramisu Chaffle Cake Recipe

Tiramisu Chaffle Cake Recipe
Makes: 4 servings
Tiramisu Chaffle Cake Recipe Ingredients
2 tbs Unsalted Butter, melted
2 tsp Instant Coffee or Espresso Powder
1 oz Cream Cheese, softened
2 Large Eggs (room temp)
1 tsp Vanilla Extract
1/2 tsp Hazelnut Extract (optional)
1/4 c. Blanched Almond Flour, fine
2 tbs Coconut Flour
1 tbs Organic Cacao Powder
2 tbs Lakanto Powdered Sweetener
1 tsp Baking Powder
1/8 tsp Himalayan Fine Pink Salt
Frosting:
4 oz. Mascarpone Cheese
1/4 c. Lakanto Powdered Sweetener
1/2 tsp Vanilla Extract
1/2 tbs Organic Cacao Powder
1/2 tsp Instant Coffee
Tiramisu Chaffle Cake Recipe Instructions
- Melt the butter in a microwave-safe dish, then stir in instant coffee.
- In a medium mixing bowl- add cream cheese, eggs, and extracts. Blend well.
- Add all dry ingredients and mix until incorporated.
- Scoop 2 heaping tbs of batter into the waffle maker, cook 3-4 mins each.
- Make the chaffles and let cool while making the frosting.
- In a separate bowl- add Mascarpone, sweetener, vanilla.
- Split cream into 2 separate bowls if you want two layers of frosting.
- Add the cacao and instant coffee into the second bowl, blend well.
- Layer the white cream over each chaffle and stack.
- (optionally) Refrigerate the cake for 20 minutes.
- Spread the second cream over top and around the sides.
- Put the cake in the fridge for 20-30 minutes to let the frosting set up.
- Cut into slices and enjoy!

Notes:
You can use a hazelnut flavored Instant Coffee or Hazelnut Extract as it gives that extra depth of coffee flavor. I also really enjoy SweetLeaf Sweet Drops Hazelnut Liquid Stevia in my coffee!
The layering of frosting is completely optional, but I think it looks pretty and I like tasting the two different creams between the chaffles.
If you want it extra rich, use all Mascarpone cheese instead of regular cream cheese in the cake batter.
This Chaffle cake was even more delicious after setting in the fridge overnight!

I made the tiramisu it was soo good. my turn more dark, i used the chocolate powder called for the Oreo cookie lol. my question is what do you do with the butter and the espresso at the beginning of the recipe, it said melt the butter, i wasn’t sure so i brush that butter on the waffle maker before the chaffle mix
Very decadent dessert.
I ended doubling the marscapone icing amounts. There wasnt enough to spread a decent layer with original recipe amounts.
Second time I made this, I just used all the icing for each layers. And made a separate choc/coffee icing with cream cheese instead.
