Rice Krispie Treat Chaffle Copycat Recipe Ingredients

Rice Krispie Treat Chaffle Copycat Recipe Instructions

  1. Plug in the mini waffle maker to preheat.
  2. In a medium mixing bowl- Add egg, cream cheese, and vanilla.
  3. Whisk until blended well.
  4. Add sweetener, crushed pork rinds, and baking powder.
  5. Mix until well incorporated.
  6. (optionally) sprinkle extra crushed pork rinds onto waffle maker.
  7. Then add about 1/4 scoop of batter over, sprinkle a bit more pork rinds.
  8. Cook 3-4 minutes then remove and cool on a wire rack.
  9. Repeat for remaining batter.
  10. Make the Marshmallow Frosting:
  11. Whip the HWC, vanilla, and confectioners until thick and fluffy.
  12. Slowly sprinkle over the xanthan gum and fold until well incorporated.
  13. Spread frosting over chaffles and cut as desired, then refrigerate until set.
  14. Enjoy cold or warm slightly in the microwave for 10 seconds.

I know what you are thinking.. pork rinds, really?! You probably already know that many low carb folks have already been incorporating the fried snack chip into several sweet type recipes. It IS actually a thing. So why not use that flavor and crunch for a yummy chaffle!

 

Who would have thought that it would make a VERY close copycat to what we all know from a “Rice Krispies Treat” in a chaffle! Even my daughter has gobbled these up without hesitation.

Our kids are the best judge of any classic packaged bit of sweetness they all know and love. I’ll take that for a win. I love that we can take this crazy chaffle craze and make just about anything!

Adding a good sprinkle on the waffle maker, then again over the batter- made the chaffle even more crispy!

 

 

Cut them into squares to make it pretty! You can keep them round if you’d like.
