Low Carb Shepherd’s Pie Casserole Recipe Ingredients

  • 6 slices of bacon, chopped and cooked
  • 1 1/2 pounds of lean ground beef
  • 1/2 medium green pepper, diced
  • 1/2 medium red pepper, diced
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • 1 teaspoon of onion powder
  • salt and pepper to taste
  • 2oz can of sliced black olives
  • 3 large eggs, whisked
  • 2 cups of shredded cheddar cheese

Cauliflower mixture:

  • 1 head of cauliflower, cut into florets
  • 3 tablespoons of butter
  • 1/4 cup of heavy whipping cream
  • salt and pepper to taste

Low Carb Shepherd’s Pie Casserole Recipe Instructions

  1. Preheat oven to 375˚F.
  2. In a large cast iron pan, add in peppers and ground beef. Cook until beef has been browned. Add in seasonings, black olives, and bacon. Set to the side.
  3. Boil cauliflower until tender. Drain cauliflower and mash cauliflower.
  4. Add in butter, salt, pepper, and slowly add in heavy whipping cream. Continue mashing and mixing until it is smoother and creamy. (Depending on the size of your cauliflower, you may need to add less whipping cream.)
  5. Add eggs to your meat mixture and top with cauliflower mash.
  6. Add an even layer of cheese to coat the mash.
  7. Bake in your oven for 20-25 minutes, or until cheese is melted and bubbly.
  8. Optional, garnish with cilantro, black olives, and bacon.

Since this Casserole has dairy in it, you’ll need to store it in the fridge. The casserole will need to be in an airtight container.

You can get away with storing it for around 3-5 days. You can also freeze this casserole by using a freezer-friendly dish.

If you’re in the mood for leftovers and want to reheat the Shepherd’s Pie Casserole, then you will want to preheat the oven for 350 degrees. From there, you will want it to cook for around 30-60 minutes or until it’s not cold in the middle anymore.
