Keto Rye Bread Recipe
We just make Keto Rye Bread!!! OMG! This is a recipe that really does tastes like real rye bread as I remember it.
This is a spin off of Deidre’s Low Carb Bread recipe that we made keto! If you need a good low carb bread recipe, you should totally try it!
We just added a few more tweaks so we could make it into Keto Rye Bread! The main ingredient in this recipe that really makes it taste like real bread is this Vital Wheat Gluten! Great results without the carb guilt. Gluten is basically the ingredient that gives bread is texture. If you don’t have any problems with gluten, then this is a recipe you will want to try!
KETO RYE BREAD RECIPE USING A BREAD MACHINE
This is the exact recipe we used for our low carb bread. Some of the versions out there also use Xanthan gum in place of psyllium husk powder but we really like this version the best!
KETO RYE BREAD INGREDIENTS
- 1 cup warm Water about 90-100°
- 1 TBS Active yeast
- 1 tsp Allulose, Liquid form
- 2 tbs Caraway seeds
- 2 tbs sesame seed oil
- 2 Eggs, slightly beaten
- ⅔ cup Ground Golden flax meal
- ½ cup Oat Fiber
- 1¼ cup Vital Wheat Gluten
- 4 tbs Allulose Powdered sugar form (Use can use the same about of Swerve or Erythritol too)
- 1 tbs of psyllium husk powder
- 1 tsp Pink Salt
- 2 tbs softened butter

- 2 carbs per slice @ 16 slices per loaf.

Delicious Low Carb Bread that tastes like REAL RYE BREAD and keto friendly too!
Equipment
Ingredients
- 1 cup warm Water about 90-100°
- 1 TBS Dry Active yeast
- 2 tbs Caraway seeds
- 2 tbs sesame seed oil
- 1 tsp Allulose Liquid form
- 2 Eggs slightly beaten
- ⅔ cup Ground Golden flax meal
- ½ cup Oat Fiber
- 1¼ cup Vital Wheat Gluten
- 4 tbs Allulose Powdered sugar form Use can use the same about of Swerve or Erythritol too
- 1 tbs of psyllium husk powder
- 1 tsp Pink Salt
- 2 tbs softened butter
Instructions
- Add to the bread machine in this exact order:
- Add the warm water and yeast and let it sit for 5 to 7 minutes until it foams slightly.
- Add the liquid Allulose, caraway seeds and the sesame oil
- Add the whipped eggs.
- Add the ground golden flax meal.
- Add the oat fiber.
- Add the vital wheat gluten.
- Add the powdered allulose sweetener.
- Add the psyllium husk powder.
- Add the pink salt
- Add the room temperature butter.
- Close the lid of the bread machine and set the machine to mix and bake at 3 hours.
- Remove the bread from the bread machine pan and allow it to cool before slicing it.

KETO RYE Bread Recipe Using a Stand Mixer
Delicious Low Carb Bread that tastes like REAL RYE BREAD made in the oven!
Equipment
Ingredients
- 1 cup warm Water about 90-100°
- 1 TBS Active yeast
- 1 tsp Allulose Liquid form
- 2 tbs butter melted
- 2 tbs sesame seed oil
- 2 Eggs slightly beaten
- ⅔ cup Ground Golden flax meal
- ½ cup Oat Fiber
- 1¼ cup Vital Wheat Gluten
- 4 tbs Allulose Powdered sugar form Use can use the same about of Swerve or Erythritol too
- 1 tbs of psyllium husk powder
- 2 tbs Caraway seeds
- 1 tsp Pink Salt
Instructions
- Prepare a bread loaf pan ahead of time by greasing the bottom of sides of the pan and set aside.
- In a small bowl, add the warm water and dry active yeast to the bowl and let it sit for about 5 to 7 minutes until it becomes slightly frothy.
- Add the liquid allulose, melted butter, sesame seed oil and the whipped eggs to the bowl with the active yeast in it.
- In the stand mixer bowl, add the dry ingredients and mix it on low until it's fully combined.
- Combine the wet ingredients to the dry ingredients in the stand mixer bowl.
- Mix it with dough hooks until the dough comes together and is a bit sticky.
- Use your clean hands to shape the dough into a bread loaf and place it in the bread loaf pan you prepared earlier.
- Lightly coat the dough with a brush of olive oil or spray cooking oil.
- Lay a sheet of plastic wrap over the bread and set it in a warm area to allow the bread to rise for an hour or until it has doubled in size.
- Once the bread has risen, preheat the oven to 375 degrees and remove the plastic wrap.
- Place the bread in the center rack of the oven and bake it for about 25 minutes or until the center is done by doing a toothpick test.
- Remove the bread from the oven when it's done and allow it to cool before slicing it.

Bread Rising Instructions and tips: If you don't have a warm area in your house, you can turn on the oven for 5 minutes at 200 degrees then turn off the oven and place the bread pan inside the warm oven. Just be sure to wait a few minutes before putting the bread pan in the oven because you don't want to bake the bread or melt the plastic wrap. This creates a warm environment for the bread to rise. Or you can add one cup of water in a microwave safe bowl to the microwave for about 30 seconds. This warms the microwave and you can add the pan to the microwave but don't turn the microwave on! This is only an environment to help the bread rise. I'm not a fan of the microwave method for fear someone will turn it on and not realize there is a metal bread pan in there.

Made the bread machine version twice now. Both were great !
The 2nd one I added 1 more tablespoon caraway seeds, and slightly reduced water and gluten to try and make the bread a little dryer and less chewy. And added sesame seeds in the mix AND added to the dough before baking. Love that extra flavor.
Worked great (but do the orig recipe first in case your bread machine works a little differently)
So much better than all the various low carb breads I’ve tried from stores.
And making it yourself, you can adjust the result.
I just made this bread in my bread machine. WOW what a beauty. And…delicious. I had it with that Irish butter and low card jam. Super toasted too!
Just made this for Ruben sandwiches. I not going so far as to say it’s as good as real bread ( that’s just silly). I can honestly say this is the best Keto recipe yet. I’ve made easily dozens of Keto bread recipes over the past few years. This is hands down the best! I don’t have bread maker, but the mixer version was fine. I do wonder though, if this dough would hold its shape on a sheet with no loaf pan, to make a country loaf? I’ll next try the non rye version.
