Keto Rhubarb Bread Recipe with a Glaze Topping

Rhubarb is in season and we just made a fantastic Keto Rhubarb Bread Recipe with a Glaze Topping!  FANTASTIC!

If you never attempted a rhubarb recipe, I highly suggest you get out of your comfort zone and try it.  Rhubarb is a tart vegetable that is often baked with something sweet to offset the tartness.  Rhubarb can be eaten raw too but I prefer it in baked goods like this recipe.

How to pick rhubarb at the grocery store?

Look for firm, crisp stalks, and shiny skins. Avoid stalks that are limp with blemishes and split ends. Look for small leaves, which indicate a younger plant, but don’t eat them — the leaves contain oxalic acid, which is toxic.
Who sells rhubarb near me?
You should be able to find rhubarb at your local grocery store.  Here in Texas, I’ve found rhubarb at Natural Grocers, Walmart, and Randalls grocery stores.  Call ahead to find out before you go.
Can you freeze rhubarb?
Yes,  Cut the rhubarb into 1 inch pieces.  Lay them flat on a baking sheet to freeze them.  After about an hour the rhubarb will be firm, place the firm rhubarb in a freezer friendly container or freezer plastic bag to store it.  Rhubarb can be kept frozen for up to a year.  This is a great way to keep rhubarb fresh and use it when it’s not in season.
Is rhubarb a fruit or a vegetable?
Rhubarb is a vegetable almost like celery but with a tart flavor.
Is rhubarb keto friendly?
Absolutely!  Rhubarb has about 6 grams of carbs per cup with about 2 grams of fiber making this vegetable very low carb and keto friendly!
Why is it popular to combine rhubarb with strawberry?
Rhubarb tends to be very tart so it works well when you mix it with a sweet fruit such as strawberries.  It works will in sweet baked goods too.  This is why this recipe is fantastic!

Keto Rhubarb Bread Recipe with a Glaze Topping Instructions

 

Make the bread:

  1. Preheat the oven to 350 degrees.
  2. With a hand mixer cream together butter and sweetener.
  3. Add the eggs and continue mixing.
  4. Add the vanilla, orange extract, salt, almond flour,  and baking powder.
  5. Mix until fully combined.
  6. Fold in the rhubarb.
  7. Bake for 30 to 35 minutes or until it’s golden brown on top and the center is fully done when you do the toothpick test.

Make the glaze:

  1. In a small bowl, combine the monk fruit, vanilla and water.  Mix until fully combined.  The batter should be in a partial liquid form.  Add a bit more water until you reach the glaze consistency you want.
  2. Remove the bread from the oven and immediately take it out of the pan.  Run a knife around the edges of the pan to assure no sticking before you attempt to remove the bread from the pan.
  3. Place the warm bread on a baking rack to cool.
  4. Drizzle the glaze over the top of the warm bread.

Serve it warm or cold.
