Keto Ice Cream Sandwich Chaffle Recipe

Have you seen this Keto Ice Cream Sandwich Chaffle Recipe yet?  You can take your favorite keto ice cream (we love the Rebel brand) and turn it into a sweet treat when you make a sweet chaffle recipe!  It’s a wonderful keto dessert idea!

We used this Keto Chocolate Waffle Cake Recipe for the ice cream sandwich part.  It’s not exactly a chaffle because it doesn’t have cheese but it’s absolutely lovely!! Well, wait.  I guess you can call it a chaffle because it’s make with cream cheese and cream cheese is still technically a cheese, right?!!  I think so!

This Keto Ice Cream Sandwich Chaffle Recipe makes one really big ice cream sandwich so I can see you splitting it with someone or even cutting it in four separate pieces.   You can make your own Keto Ice Cream or you can use a store-bought brand.  There are plenty of keto ice cream options out there.  We have a Keto Chocolate Strawberry Ice Cream recipe you can use too!

I have a huge love for anything chocolate flavored.  You can add extra sugar free chocolate chips and make this a double chocolate Keto Chocolate Waffle Cake too!  That would be chocolate heaven!  Here’s a recipe to make your own Homemade Sugar Free Chocolate Chips too!

Keto Chocolate Waffle Cake Recipe Instructions

  1. In a small bowl, whip up the egg.
  2. Add the remaining ingredients and mix well until the batter is smooth and creamy.
  3. Pour half the batter in a mini waffle maker and cook it for 2 1/2 to 3 minutes until it’s fully cooked.
  4. Allow the chaffle waffles to fully cool before placing ice cream in the center.
  5. Freeze until solid.
  6. Serve cold and enjoy!

    I made this for breakfast without the ice cream.. super doodle, what a great way to get your egg in and so tasty. I also added a few Lily’s chocolate chips. So good.
