Here’s the trick to getting the noodles not to taste funky. First, you have to strain and rinse thoroughly under cold water. Then “dry fry” them on a medium heat pan, stirring around for a few minutes, until they are no longer wet. They won’t turn a different color when you fry them either. They look exactly the same. Just try them for about a minute or two on each side to remove as much of the liquid as you can. This way to noodles absorb all the seasonings from the dish you are making!
Personally, I believe the Shirataki Pasta products are a wonderful replacement to those following a Keto/Low Carb lifestyle. If cooked properly, they are very neutral as a base in many meals.

Makes: 4 servings
Keto Carbonara Sauce Recipe with Keto Noodles Ingredients
4 bags Angel Hair Konjac Shirataki Noodles
10 oz. Bag Asparagus, Raw
8 oz. Uncured Ham (fully cooked), diced
4 tbs Unsalted Butter
4 tbs Bacon Grease (or more butter)
1/2 c. Heavy Whipping Cream
8 oz. Gouda Cheese, grated
1/2 tsp Xanthan Gum by Bob’s Red Mill
1 tbs Italian Seasoning Blend
1 tsp Granulated Onion
1 tsp Granulated Garlic
Keto Carbonara Sauce Recipe with Keto Noodles Instructions
- Cut open the miracle noodle bags and dump them into a strainer (over the sink). (one bag equals one serving)
- Run under cold water and rinse thoroughly.
- Heat a large skillet to medium heat (dry).
- Add the noodles, stir and toss around the pan until they appear “dry”.
- Dump them out onto a platter, or bowl and set aside.
- Turn down heat to med-low.
- Steam the asparagus, just until tender, then rough chop.
- Add butter, grease to pan and let it melt/get bubbly.
- Whisk in the heavy cream, grated cheese. Stir until melted throughout.
- Sprinkle in all of your seasonings.
- Add diced ham, chopped asparagus. Give a good stir.
- Then add the dry noodles back in, mix until well incorporated.
- Let it all heat through a few minutes until hot.
- If sauce appears too thin, sprinkle in Xanthan Gum.
- Stir again until it thickens to a better consistency.
- Serve and enjoy!
